Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels

Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

Formerly known as "Scully"

Hazy orange color with a small, white head that left nice lacing on the glass. Aroma of wood, wine, wild yeast, spices, and strawberry. Taste of wood, strawberry, pepper, a little tart.

Bottle shared at CBC Clerkenwell in London - big thanks to Kenneth. Pours cloudy pale gold with a scant, foamy white head. The nose holds light herbs, salt, lemon, wood and berries. Medium sweet flavor, moderately acetic, with pale bread, lemon, sweat. Medium bodied with fine carbonation. Sharp acetic finish, sweaty, with hints of wintery spices. Novel, but not terribly drinkable.

Vintage bottle courtesy of jcartamdg. Cheers, Jason! Pours a hazy yellow-orange with pink highlights. Nose is berries, pepper, honey, saison malts, and a nice fruity yeast. Flavor is similar with lots of strawberries, some saison malts, some Belgian yeast, and some pepper. Medium in body and delicious overall.

Orange and cloudy pour from draft at Two. White head. Strawberry and peppery happiness. I thought the Halia I just had was incredible and this might be better.

Draught. This is a truly awesome brew with a whole lot going on. It takes time to unpack all of it.

Pours a bright golden color with a frisky tight bubbled white foam. The nose is a complex array of strawberry, yeast, vinous acidity and a bit of rustic grain. The palate is light and refreshing with nice complexity. Pepper, strawberry, hay, vinous oak, bright acidity... a touch thin but very enjoyable.

Bottle pours hazy orange with lots of head. Interesting aroma off peach, strawberry, and honey. Slightly sweet and tart flavor. Somewhat fruity with a touch of cardboard, honey, and pepper. Medium body with nice active carbonation. Pretty good but not crazy.
