Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels

Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

Tasted on 6/29/14 from a capped 750mL bottle purchased at Bruisin’ Ales. Pours slightly hazy golden orange with a thick, fizzy white head that recedes fairly quickly to nothing at all. The nose is really great, with plenty of fresh, honeyed strawberry, a great sour note, and earthy white peppercorn. The flavor is the same with sour strawberry, a touch of spicy and funky yeast, and plenty of earthy white peppercorn. The body is medium with lively, almost sparkling carbonation, and a long earthy white pepper and strawberry finish.

2013 vintage 765 ml bottle. Pours a hazy golden orange color and topped by a thin head of bubbles that quickly dissipates to a still body below. The aroma shows notes of soured fruit, strawberries, peppery spice, some honey sweetness, and plenty of barnyard funk from the Brett along with lacto sourness. The flavor follows with ample amounts of sour fruit, strawberries, and peppery spice. The Brett adds a good amount of funky flavors while the honey adds just a touch of sweetness. Good amount of sourness throughout. Medium bodied with tingly carbonation that leads to a lengthy, tart, and dry finish. Really nice sour ale, but I have to think that this would be better fresh as the strawberry isn’t as prevalent as I was hoping for.

2013 vintage. Pours a light golden, extraordinarily disappearing head leaves a glass of straw coloured beer with no lacing. Nose- strawberry, peppery raw honey with slight green apple. taste- juicy strawberry tartness and acidic finish. A really unique beer in that the nose has a strong honey nose but then almost no sweetness and quite a dry finish. delicious . carbonation is relatively low lending a creamy and peppery mouth-feel.

Bottle sample at De Bierkoning during Carnival Brettanomyces 2016. Amsterdam, The Netherlands. 24.06.2016. Taste with Ogi and Aart. Pour it hazy orange color with small white head. Aroma strawberry, some honey as well. Taste perfectly balanced strawberry, honey, some peppery also present and can taste it. Smooth texture, Belgian yeast, sweetish spice, full body, creamy, average carbonation, long finish. After taste sweet pleasant. Perfect!

Zesty fruit, citrus fruits, light acidic, some yeast. Slightly hazy gold, small, creamy, white head. Medium sour and light sweet. Light sours warm up to some sweetness, wood barrel flavours open up to some intense sweet fruits, probably some strawberries, light molasses, alcohol. Nice Sour, interesting flavours from sour to sweet. Keg at the brewery tap room, Chicago.

Shared at an Ann Arbor get together at Jeff’s on July 20. 750 mL bottle. The pour is a lightly foggy golden yellow with a small cap of white head that lingers pretty intently. The aroma is definitely sour fruit. There is a little bit of funkiness here, but it’s pretty good. I like the strawberry aroma. It’s normally a docile fruit when in beer, but I’m a fan. The funk on the back end is pretty hefty. It’s something else. The flavor is a little better. There is a nice bright berry and a great tart crispness. There’s a little pepper on the back end, but it does tie it together nicely. The mouth feel is light and crisp with a nice carbonation and a really peppery aftertaste, especially as it warms up. This is one of the better strawberry sours I’ve had, but the pepper just needs to calm it down a little.

A lightly hazed golden saison with a thin white head. In aroma, sweet fruity malt with light strawberry notes, light Brett, light lactic notes, very nice. In mouth, a nice mix of tart strawberry jam, light acidity, light Brett, light cork character, ground cherries, very nice and complex. On tap at Gnarly Barley.
