COMMERCIAL DESCRIPTION
Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels

Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

Tasted on 6/29/14 from a capped 750mL bottle purchased at Bruisin’ Ales. Pours slightly hazy golden orange with a thick, fizzy white head that recedes fairly quickly to nothing at all. The nose is really great, with plenty of fresh, honeyed strawberry, a great sour note, and earthy white peppercorn. The flavor is the same with sour strawberry, a touch of spicy and funky yeast, and plenty of earthy white peppercorn. The body is medium with lively, almost sparkling carbonation, and a long earthy white pepper and strawberry finish.

Rating from 2013. Pour is mostly clear golden orange with a tight white head. Nose has a fair bit of grain and tangy yeast with a focus of leathery bret and some fruity bret in back. Taste is unique, body is medium with very strong carbonation. Loads of bret and fairly sour. Golden fruit bret with some citrus and a tangy yeast underneath. A good bit of peppery spice towards the back. Different, theres an interesting dusty cobweb mid palate. decent.

Bottle. Cloudy, the color of peach fuzz, with one finger of pure white foam. Beautiful, fantastic, superlative aroma. Honey is apparent, as are sweet, floral notes alongside white pepper, vinegar, a touch of bretty funk and a splash of fresh strawberry. In the flavor, too, are good things: Honey-drizzled strawberries, nearly ripe. Fresh-cracked pepper. Barnyard funk. A touch of grass. A spash of tartness. Tastes green like strawberry vines, with incredible balance. Fluffy, whipped medium-light body. Gentle carbonation. Has the perfect amount of funk, vinegar and fruit flavor. Absolutely delicious.

Bottle split at CBC Clerko, 15/04/15, thanks to Kenny. Hazed orange golden with a decent off white head that quickly dissipates. Nose is pissy straw, citric rinds, light tropical scorch, mandarin, earthy, light yeast. Taste comprises apricot, funk, pissy orange, earthy citric, pink berry tang, modest acidity. Medium boded, fine carbonation with a light acidic burn in a tarte fruit compote. Solid sour.

Craft Clerkenwell. Bruce’s UK Swan Song. Hazy gold beer, no real head. Palate is light, semi dry, mild fine carbonation. Mild lemon and a little Worcester sauce. Touch of red wine. Little floralness. Light dry finish. Overall slightly acid but it’s pretty drinkable.

Bottle sample at a sour tasting at kerenmk’s place. Thanks Stas & Vova. Cloudy yellow-golden. Lovely sourish aroma with strawberries, wine and lacto. Sour flavor, woody, somewhat vinous, fruity (some strawberries), a bit of sweetness, and lacto. Medium-bodied. Really good stuff.

Thanks Ken, you are a beautiful man! Pours golden and hazy with a white head. Smells like candy and feet...not my feet, possibly yours, but not in a bad way, unless your feet stink. Sour fruit, unripened strawberry. Taste is tart adn tangy, Chardonnay, touch of wood, no feet or candy or even candy feet. Medium feel overall a very nice beer

Bottle shared at Bruce’s farewell drinks. Thanks to Kenny. Translucent orange / golden coloured pour with a fleeting fine white head. Aroma is big funky apricot, musty, little plastic, some sweet and sour, sour. Flavour is sour funky apricot and peach yougurt. Spicy fruit, funk, many layers, wheaty doughy grains. Palate is medium bodied, sweet and sour, crisp. Peppercorn. Pretty good.

UPDATED: APR 16, 2015 Bottle thanks to Ken. It pours cloudy golden orange with a small white head. The nose is sour, funky, oak, vanilla, sherbet, peachy, sour strawberry and must. The taste is crisp, tart, sherbet, strawberry, orange tango, apricot, some acidity, candied citrus peel, alcohol heat, lactic and light spice with a dry finish. Medium body and moderate carbonation. Could be more sour.... Still solid.
