COMMERCIAL DESCRIPTION
Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels

Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

Bottle. Smells like sour strawberries. Tastes sweet, sour with hints of strawberries. Has oaky wine after taste. This sour is delicious.

Bottle, RBAG 2014 prelim. Medium gold, hazy. Fresh strawberries and white pepper, very flavour-dense, with moderate sourness, and gentle peppery heat in the finish. Too expensive, but fucking good nonetheless.

Bottle - Sour and tart nose, white pepper and white grape. Cloudy yellow with a small white head. Pepper and a tartness with strawberry in the finish. Complex and fun. Nice.

Bottle shared by Tony at RBAG. Cloudy golden pour, light white head. Aroma is Brett funk, lots of tartness and some light tart fruit. Taste is juicy fruit funk, light tartness, with a dry finish. Very tasty.

Des fraises bien en santé sur lesquelles poussent des grains de poivres pointus sont enrobés d’un voile gras vineux. Le corps est bien effrevescent au début mais la mousse ne tient pas, buvabilité modérée.

After 8 months finally popped the top on this ’bad girl’ to enjoy with 2 other friends last night. All 3 of us are iPA and Stout drinkers. So this was quite a change. We have tried other sours in the past but we all agreed this was the best so far by far. Scully didn’t let us down. Have one more bottle cellaring will probably try sometime around T day and Xmas day.

Tasted on 6/29/14 from a capped 750mL bottle purchased at Bruisin’ Ales. Pours slightly hazy golden orange with a thick, fizzy white head that recedes fairly quickly to nothing at all. The nose is really great, with plenty of fresh, honeyed strawberry, a great sour note, and earthy white peppercorn. The flavor is the same with sour strawberry, a touch of spicy and funky yeast, and plenty of earthy white peppercorn. The body is medium with lively, almost sparkling carbonation, and a long earthy white pepper and strawberry finish.

Sampled at Cugino’s during their 10th annivesary - Pours cloudy murky yellow with a white head. The aroma has lots of peppercorn, mild strawberry, fresh herbs, nice tartness, touches of vanilla and some spices. It has a medium crisp body that gets smoother on the finish and has nice soft carbonation. The flavor begins with tartness, hay, acidity, pepper, dried herbs and dried fruit. The finish has more vinegar sourness and heavy herbal notes. Really nice sour ale.

Bouteille 75cl de et partagée avec Pierre T. Dorée sur un léger trouble, col blanc s’estompant rapidement. Arôme met de suite en avant le poivre blanc qui est ici dominant sans pour cela être dérangeant. Retrouve tout autant un rétro de fraise idéalement bien placé pour cette bière. Ici le fruité est naturel (du moins je l’espère) et on retrouve ce léger bouquet terreux fruité qui fonctionne bien avec le bouquet de la bière. Palais offre également sa part belle au poivre blanc qui est fort agréable. En bouche, je note un rappel aux bières ’farmhouse’ de St-Somewhere, principalement avec l’usage d’une levure de champagne qui ajoute une complexité marquée et qui balance parfaitement ce poivré léger et les fraises. Palais reste sec sur un résiduel fruité de fraise fort plaisant. Le miel ne se note pas particulièrement mais est probablement utilisé pour relancé la fermentation en bouteille?

Bottle. Hazy golden pour, with a small white head. Tart sourness, the pepper is actually quite strong and feels a bit out of place, fresh strawberries, honey sweetness, berry, lightly floral, and some oak. An odd sour, interesting, but it doesn’t completely work for me.

Strong brown ale inspired by the beer brewed by Belgian Trappist monks. Very little bitterness, this beer has intense malty and sweet flavours, mixed with the taste of chocolate and caramel. It presents complex red fruit and spice flavours due to the type of yeast that is used during the brewing process. This beer is at its best only after it has aged for six months. The Rigor Mortis are complex beers designed and brewed with patience and care in the tradition of the great Belgian Abbey beers.Rigor Mortis Abt is brewed only once a year, and is sold in April until stocks last. ---Rated via Beer Buddy for iPhone
