Cask at Clybourn. Transparent honey once settled, thick puffy white head reducing to ring on the glass. Nose is estery with pear, plum, and light toast, bit of dusty wood. Flavor is more toast bitterness at front, pear mid, and a dry oak finish with toasty grain elements reemerging. Bit muted but overall nice and balanced, approachable, and decently spiced.

Date: November 22, 2011 Mode: Cask Source: GI Clybourn Description: Translucent golden pour with good head and lacing, malt and hops in the aroma, taste was similar, thin bodied, smooth and creamy guessing due to the cask.

Flight serving on tap at the Clybourn Brewpub (Chicago, IL). Pours a golden transparent hue, glowing well with a decent frothy whitish head that ends up a decent layer cake and laces small. Aromas are gentle grainy malts, dough, and cereal. Some bread, touches of earthy hops give a light bitter nose. Some gentle toast is restrained. Initial is light bodied, offering bready dryness, some gentle toast, mellow grains, cereal malts. Middle shows some of that dry hopping, earthy grass with a gentle cool spice. Faint lemon, moving into more grain and bread, a touch of toastiness. Finish shows gentle lemon, cereal and bread dough, touches of toast, faint lemon cookie, dry florals and grassy hops give a touch.

Draft at GI Clybourn. Pours an attractive deep gold with a persistent white head. The nose is very malt forward, toasty bread crust and then some grassy hops. Muted ester profile. On tasting, quite bitter with a soft malt profile that lends a bit of toast as well. Some light GI fruitiness and grassy hop finish. Solid Bitter.
