COMMERCIAL DESCRIPTION
Our IPA recalls a time when ales shipped from England to India were highly hopped to preserve their distinct taste during the long journey. The result, quite simply a hop lover’s dream. And this classic ale adds a fruity aroma, set off by a dry malt middle, to ensure that the long hop finish is one you’ll remember.

This IPA is one of the most delicious and balanced I’ve ever tried. Right when you open it and pour, it welcomes you graciously to the party it has in store. It has a wonderful golden color with a burst of bubbles and a light, hoppy head that kicks things off nicely. There is no bitter burst of hops here, just a gentle, somewhat bubbly smoothness. The beer itself is very sweet and creamy, and reminded me somewhat of Three Floyd’s Gumball head with its hints of candy. There is a distinct presence of malt which balances out the hops perfectly, meaning that every sip you take a delightful and balanced. More of a malty IPA with a note of hops than vice versa, which is how most IPAs are. This is perhaps the easiest drinking IPA I’ve ever enjoyed. Perfect representation of the city of Chicago.

12oz bottle into a pint glass. Pours a clear deep orange with a two finger fluffy white head. Amazing head retention and lacing. I am quite impressed. Aroma of pine and dank with a touch of orange thrown in. There is definitely an "English" quality on the aroma as it leans more towards the earthier hops versus tropical fruit. A light touch of caramel and toffee sneaks in too. Pine and orange on the taste with a little bit of toffee. Some floral notes and sweetness very reminiscent of the English style. Even some yeasty esters seem to make an appearance. A little biscuit in the background but the hops remain pretty far forward. Moderate bitterness and a moderately sticky finish. Overall, a good interpretation of the style. Doesn’t really stack up to the likes of Samuel Smith but for a widely available American beer, it’s a nice job.

S: Hoppy citrus points to Cascade or similar hop being used also had notes of cork and farmyard. T: Husk, grapefruit, pine, grain, apple. Bitterness came in at the finish along with a slight hint of molasses. M: Light texture, well carbonated, crisp. Very easy to drink.

During a time when IIPAs and IIIPAs are becoming more and more the norm rather than the exception, it is nice to see a beer that stays true to the English IPA style. Pours a very light copper, somewhat brilliant with golden highlights, good head with decent retention and fine lacing. There’s a distinct fruitiness that jumps out in the aroma which is slightly floral with a very light dose of citrus. There’s also a slight ester from the malt that comes across as biscuit and light tobacco. It tastes lightly sweet which quickly dissipates into a moderately dry finish. Very satisfying and drinkable. They’ve kept the body light enough to enjoy more than one pint. There’s a chewy malt and fruity yeast characteristic which is unmistakably English. A beautiful beer and a classic example of the style.

Draft in NYC. Very nice, classic medium IPA. Certainly on the maltier side but quite nicely balanced. Rich hops, some freshness. Would drink this any time.
