COMMERCIAL DESCRIPTION
A Belgian-style dubbel brewed in Celebration of the birthday of our brewers 2nd daughter, Ciara. The Belgian yeast strain imparts a complex spicy aroma and flavor, while the blend of 7 malts give the brew a deep amber/brown color with a rich malty/fruity palate and a warm finish. Served in a Tulip glass.

The beer pours a super dark blood red that is pretty clear. The head is light white, very watery and good quickly. The aroma is super sweet, tons of inverted sugar to start, with the finish being a all dark fruits. The taste is very malty with a ton of dark fruits again, mostly some figs. The feel is super watery which isnt great. Overall, this is ok, nothing special or anything Id recommend getting. Good things its probably a one timer.

Tap @ GI Clybourn (from notes). Pours a clear reddish amber color with a thin off white head. There was a pleasing aroma of berries, tart cherry, sweet malts and a bit of spicy yeast. The flavor had a nice tartness, spicy yeast, sweet malts with sour cherries. Somewhat acidic.

On tap at Goose Island Clybourn. Pours a clear, deep red body. Fun aroma is spicy and fruity from the Belgian yeast. Black pepper, plum and grape. Flavors of cherry, prune, and more spice - mostly coriander. Very nice. Medium body with moderate carbonation. Malty with a lingering fruit finish. Light, warming alcohol. Overall well done. A tasty, easy drinking dubbel.

On tap at Wrigleyville before this years DotLA. Dispensed to a tulip glass with a clear, deep amber/brown, modest off white foam that reduced to a pencil width ring and light film, and left some spotty lacing. The aroma was very malty, lightly spiced, candi sweetness, and the presence of alcohol. The flavor was similar, with more of a brown sugar sweetness, rich malt, dried dark fruit notes, and alcohol in the background, A very smooth Dubbel.

Had on tap after a tour of Clybourn. Nice fruity esters, but lacking the full flavor Im used to in great dubbels.

On tap at Clybourn. They said this was their odd vintage that was a lot more fruity than others, and from my memory, Id agree. Amber brown in color with a thin beige head. Nose is nice lots of fruit especially berries and cherries with an earthiness. The cherries and berries balance well with the spices and a slight tartness. The flavors dont quite pop like Id like them to, but they work nicely together. Decent beer.

A reddish copper ale with a thin moka head. A beautiful aroma of berries, esters, cherry maraschino, and a bit of wild yeast. In mouth, a nice tart malt with sour cherries, lactic acids, very classy and pleasing. On tap at Clybourn, May 17 2009.

Tap at GI. Very cool beer. Retired? huh? Reddish brown pour. Good belgian yeasty aroma wtih some brown sugar, tons of fruit, and some earthy hops to round it out. Flavors are a great mix of yeast, spices, and fruits. Berries, tartness, and a touch of wet wood. Good beer.

Draught at the Clybourn pub, 03/20/09. Murky red brown thin creamy off white head. Slightly sour tart cherry aroma. Flavor is slightly sour with a dry malty backbone. Lingers mildly tart.
