Commercial Description:
A Belgian-style dubbel brewed in Celebration of the birthday of our brewers 2nd daughter, Ciara. The Belgian yeast strain imparts a complex spicy aroma and flavor, while the blend of 7 malts give the brew a deep amber/brown color with a rich malty/fruity palate and a warm finish. Served in a Tulip glass.

Draught. At Siebel Brewer’s Academy (Goose Island Brewpub, Chicago - Clybourn) Belgian tasting May 24 2007. Dark, nearly murky brown with a smallish, almost greenish creamy head huddled at the edge of the glass. Deep roast malt arom with herbal hops, vanilla and soft spices, mild yeast and fruit as well, very subtle, promises complexity. Tasted of carbonized malt, fairly strong herbal hops, lost of yeast and a surprising alcohol presence - long burnt finish and aftertaste. Thick and sugary body, bitterness from the carbonization and quite a lot of alcohol (seemed more like 10%) - excellent, perhaps a tad over-roasted.

Tap at Clybourn. Thin brown color. Scents of chocolate, lightly roasted malt, mild fruit and dry spices. Flavors. of mild dark chocolate, lightly caramelized malts and some muted spices. A dubbel with a bit more depth then the average american attempt. Perhaps a bit this in feel compared to some others, but a solid brew.

In short: A good fruity dark Belgian Ale.
How: Tap at brewpub (Clybourn location)
The look: Clear amber body with a short-lived beige head
In long: A somewhat fruity Belgian Ale mixing dark, red fruits and tropical fruits with no single fruit flavour standing out. You’re got berries, raisins, strawberries, pineapples, and just too many to list… Hops are dry grassy and a little spicy. A good beer. Brewed to celebrate the brewer’s 2nd daughter Ciara. An excellent brewer so let’s all hope that the lack of sleep won’t interfere with its brewing skills.

on Tap at Goose Island. Pour is rich dark, reddish brown and transluscent. Smell is light alcohol, malt and belgian yeast. Taste is faintly malty and even more lightly tart with a hint of alcohol. Pretty bland, really. Just reminds me of the Matilda and Pere Jacques with its too subtle flavor.

Clear, dark ruby brown. No head. Artificial banana candy aroma - strongly esteric. Initiallly candied and herbal - dries aouut and moves towards the woody dubbel astringiency. Medium to medium light. Flat. Clybourn.

Dark tan in color with a hint of an almost brown yellow thin head. Aroma is like a licorice ginger. Taste strong clove sugar with a hint of a vanilla with yeasty malty after taste
