COMMERCIAL DESCRIPTION
You might think this is a Russian style girly beer (a little Nabokov for you), but instead it is a very sophisticated Raspberry Belgian Ale. Fermented with brettanomyces (the little guys who give us that tart zing) and fresh raspberries, this brew is bright yet deep with spices and edges of the fruits natural tart quality to give it a white wine kind of finish.

On Tap, pours a clear reddish Amber color with a medium white head that leaves good lacing for a barrel aged sour. Smell of raspberry, oak, and wine grapes. Tastes of the same things in the smell. Mouthfeel is medium and oily with good carbonation and a dry finish. Great tasting barrel aged sour. Worth the price I paid. Nice raspberry and oak notes. Of course the sour funk is nice too.

Draught at Clybourn, 4/18/14
Deep, black cherry pour with some brighter strawberry red tints and a small, ruddy colored head that shows moderate to low retention. High clarity. I liked that both of their draught sours (this and Halia) had a very high relative clarity for a barrel sour (signifying its in good condition, highly filtered, or really old, but in this case, the former).
Tons of very tart brett mixes with ultra tart, acidic raspberry notes to produce a very "sour" almost lambic-like aroma. There’s some wood, for sure, adding a bit more dryness/sharpness and finally just a touch of softening maltiness on the very end, though it by no means balances. Still, I’m not too worried about the sour/sweet balance in the nose and the raspberry, brett and black pepper phenols are all quite delightful. Perhaps a touch of chalkiness in there as well, but that may just come from the wood character. For it’s abv, I didnt get nearly any alcohol. Just a touch of phenolic warming.
The flavor mimics the nose pretty well, throwing tart raspberries across the palate and adding some sharp/scratchy phenolic spiciness from the seeds, as well as wood astringency. A vanilla-like chewiness that I don’t even know that I’d go as far as to call ’sweet’ is one of the few balancing characteristics here; this thing is a sour/tart monster. The flavors are quite delicious, for what’s there, however, and despite the relative lack of sweetness, the substantial mouthfeel does at least provide something for the sourness to sink in to. The brett character is well-developed/complex and though there certainly is a slight alcoholic edge to it, it’s not too aggressive.

Draught. Pours a reddish brown color with a moderate light tan head on there. Nose is very sour, with some refreshing dark fruity elements to it. Taste is very sour with a tough bite to it, though it ends up feeling fresh and refreshing. I like it.

On tap at Clybourn. Pours a clear ruby red. Fruity sour aroma with a bit of raspberry. The taste isn’t overly sour.

Caramel, brett on nose. Orange copper appearance. Very acidic. Tastes of hydrogen peroxide. Good debriding agent. Will never get you sour people.
