Ingredients: Water, Styrian and Saaz Hops, 2-Row Barley and Caramel Malt, Yeast and Granulated Beet Sugar.
Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

Orange golden with a big white head. Aroma of brett and light grassy hops, floral and funky. Taste is lightly sweet caramel, citrusy fruit, bretty goodness. Really nice and not what i was expecting.

(bottle from 02-2014) Pours a semi-hazy orange color with a tall white head that retains very well. Aroma really pinballs between scents and constantly morphs and changes through floral, fruit, and herbal shifts. Funk tags along as well. For the floral phase I perceive predominant scent of rosehips although I smell potpourri from time to time. For the fruit phase all things citrus are displayed with a cornucopia of scents ranging from grapefruit, orange, and lemon with some residual apricot lurking mostly in the background before slamming to the forefront with further warming. The herbal scents are more minty, but they seem to die down with further warming which was a bit of a letdown as that element lifted the aroma even higher in the early goings of consumption. Flavor holds the aforementioned apricot, sweet caramel, and a good dose of lightly stinging citric hops on the finish. The case could be made for these hops being spicy. Nice undertone of funk sounds out on the far finish, but the dryness isn’t quite there yet. This bottle is only 7 months old, and maybe the brett hasn’t yet had a chance to crisp this thing up, so it would be interesting to see how one of these ages. Mouthfeel is lightly syrupy which is an undesirable characteristic for this kind of beer, and perhaps with age, this beer will lose some weight. Carb’s ok. Overall this is a solid belgian ale that, at its current price point, will prompt me to purchase another when it’s a year old to see how it’s coming along.

Orange maroon pour. Consistent lacing. Rustic earthy nose. Some citrus fruit. Medium bodied and a little viscous on the palate. Complexity is nice. More of the fruit and a fairly dry crisp finish.

Rien de trop abondant, mais tout de même désagréable… /// Bière orangée tirant sur le jaune, remplie de particules en suspension, très effervescente, et surmontée d’un large col blanc, très dense, très mousseux, cotonneux même, bien persistant, et qui laisse une riche dentelle sur les parois du verre. Arômes de pain frais, malt mielleux, fruits du verger (surtout de la poire en fait, avec un peu de pêche, abricot…), avec une petite pointe de levure acide typique des bières ensemencées de brettanomyces. Davantage en arrière-plan, on note des effluves plus herbacés et épicés (poivre, clou de girofle…) auxquels le houblon contribue certainement. On note également la présence d’un houblon plus floral. Nez intéressant et agréable, belle complexité, bonne intensité. En bouche, pétillement élevé sur la langue, onctuosité moyenne au palais. Au goût, pain frais, malt mielleux, poire et pêche, avec une touche de levure acide, et une finale au houblon qui semble à la fois un peu herbacé, un peu poivré et un peu floral. Amertume légère, équilibre sucré/acide/amertume intéressant. En bouche, intensité moyenne, complexité moyenne. Une bonne bière, sans plus…

Bottle from Safeway in Redwood City, CA. Pours a hazy golden orange. Aroma is dried fruits, white wine, spicy yeasty bits. Taste is dry white wine, apples, guava, plums... I’m getting a lot of dry, mildy sour taste from fruit skins (less of the fruit sweetness). Some spiced cloves / coriander / floral you’d expect from a belgian farmhouse but not overpowering. Very reminiscent of a white wine to me.

Almost no head. Orange golden hazy. Aroma of yeast, belgian?, fruity and spicy. Taste is also fruity and spice, some caramalt. But also a bit sour in the end. Started okay but there’s a spicy, pepperish and sour aftertaste i don’t like.

765mL Bottle (No, you’re not misreading that). Golden amber, fairly minimal white head. Aroma is caramel, pepper, nuts, toast, resin, earthy, and a slight hint of citrus. Taste is tart and fruity, with hints of apple, pear, caramel, and nuts. Fades into a sweeter, earthier, yeast and clove and finishes with a slight lingering hint of pine and citrus from the hops. Fairly fizzy carbonation, smooth and creamy. 7% ABV is hardly noticeable. Very well balanced beer, would consider storing one away to see how it ages, should I find the time.
