Ingredients: Water, Styrian and Saaz Hops, 2-Row Barley and Caramel Malt, Yeast and Granulated Beet Sugar.
Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

Pours a five finger, white head that fades to a thin layer leaving a little lace. Cloudy amber color. Medium carbonation and medium bodied. Malty nose. Starts sweet almost raisiny, hops balance well, brewer says its loaded with hops but they are really subdued. Best so far from GI. Bottled on Mar 27, 2006, pricey but worth $2.99 for a 12oz bottle from John’s Grocery Iowa City, IA.

2006 bottle. basic golden pour, tall head and moderate lacing. aroma is dominated by estery spiciness, a hint of brett funk, and not much at all of the "profuse amount of hops" that they speak of. Taste is orval-ish, but sweeter. pretty good beer overall, but nothing incredible.

12oz - 2006 - Aroma is very yeasty and spicy. Bread dough, coriander, lemon zest, peach, and white pepper. Pours bright orange with a huge head and great lacing. Flavor is citrus, yeast and spice all at once. Snappy hop back really rounds out the flavor nicely. Palate is tart and crisp. A very tasty American Belgian ale.

Spice is the predominate aroma and flavor from this Belgian style ale. Almost too much so when that spice comes up against the hops. Cloudy amber pour with small, white head. The nose presents pepper, clove and plastic Band-Aid. Clove is the top flavor, too. But there are hints of orange juice and tart cherries. Beneath the spice are the floral hops. I was not particularly in love with the combination which left an aftertaste of musty plastic. Lively carbonation. Medium body that comes across as clean, but then has a slightly sticky finish.

Pours hazy deep golden with a creamy white head. Aroma is hay and bread. Taste is slightly sour with apples and spices. Somewhat creamy mouthfeel. Aftertaste is almost grassy. Decent brew.

Bottle. Pours an orange body with an interesting (uneven) cream colored head. Carbonating bubbles race each other to the top of the liquid. Aromas of mango, apricot, apple, very nice. Flavor is more of the same. Mouthfeel is fruity with a nice peppery finish. This probably is my favorite out of the series of belgians brewed by Goose Island. Well done!

Hazy amber. Huge, dense, spongey, off white head. Spicy, yeasty, sour, fruity (light colored fruits), lightly sweet. Dry finish. Medium body, balanced. Not as good as the real thing, but a damn fine brew.

It was at the 2005 GABF that I first had this beer. I knew from my first gasp I was going to fall in love with Matilda! From there out, Matilda and I waltzed the night away along the billabong…

She pours a foggy pumpkin hued body and a rocky ivory head to adorn the glass. The aroma is spicy and decaying-ly fruity, with wonderfully wild, yet intimately tame suggestions of brett. The aroma is marvelous! The flavor brings some Granny Smith Apples, some plums and apricots, with insinuation of green banana. More of the wild yeast comes alive as the beer warms… I really admire the simple complexity of the beer… It has always reminded me of the early batches, before the brett was the major influence of Jolly Pumpkins Oro de Calabaza!
Ahhhh.. Matilda, What an astonishing beer you are!

Foggy orange-ish poor with a nice white-orange head. The aroma contains mostly orange/citrus and coriander. This is the spicest belgian I think I’ve had. The coriander is the most present, with a touch of clove, and some non- citrusy fruit..banana maybe. very dry and quick finishing. Pretty good beer.

UPDATED: JUN 12, 2009 12 oz bottle dated 3/27/06. Slightly hazy orange color with bubbly, lasting off white head. Smells of coriander, white pepper, and light citrus. Lots of coriander flavor with yeast and grainy malt undertones.. Dry on the tongue. Plenty of carbonation, but not more than I would expect in a Belgian. Tasty.
