Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

Pours hazy orange with a thin layer of head and minimal lacing. Soapy hop, mashed fermented apples and earthy yeast with a very faint citrus zest. And As PilsnerPeter pointed out an ’herbal dry finish with a hint of skunk’.

2005 bottle from Styles. I never had this??? Well, thanks for the recommendation Chris! Amberish colored, moderately hazy with floaties abounding. The bottle opened as a gusher @55 F. Slight horsey/funky aroma. Medium bodied, soft carbonation. Really a soft/rich mouthfeel. Modest amounts of Brett. come into play in flavor, definitely complex tasting with malts, obvious hop additions and Brettanomyces coming into play. Nicely done!! A beer to find and cellar...

Cordiander nose. deep amber with short white head. gummy fruit coriander red apples flavor. good moderate palate, some finish.

Pours an orange golden with tan head. No lacing is left. Slight barnyard aroma. Tart acidic touch, musty hints, pear & apple like fruityness and a grahm pie crust hint. The flavor is solid, but a bit simple. Subtle sweet fruit suggestions. Somewhat Saison like. Syrupy fruit hints of pears, apple juice, farm house earthy notes, and a light nutmeg touch. There’s also a honey grahm cracker suggestion and a surprisingly herbal dry finish with a hint of skunk. Feels Belgian, but not all together standout.

A nice simple sweet/slightly fruity aroma. I had lots of head even with a gentle pour. Medium strong lacing around the glass. A definite spiciness to it up front, maybe nutmeg. Finished very smooth, I enjoyed mine after letting it warm slightly. However, I can’t taste too much hopiness.

Mineral malt flavor with variety of fruit notes, perhaps grape, plum, cherry, apple- too many to tell. And a rustic, earthy, open-air barnyard taste and aroma.

Bottle. Brown and hazy, kind of reminds me of muddy water. Good fruity, yeasty aroma, I can definitely smell orange and lemon in this beer. This beer is a bit too sour. The fruit flavors carry over into the taste. But, I can’t get over the sourness.

UPDATED: DEC 10, 2006 good beer. medium full body. hazy, amber brown. citrus and flowers aroma. great head, lacing, and longevity. This is a healthy active beer. good on the senses. nice brew from Chicago.

UPDATED: NOV 23, 2012 Wow. Thanks to my summer Secret Santa for this one! Not often a brewer tries for an Orval clone, much less finds success with it. Light hazy orange, decent head fades away slowly. Aroma was brett, hint of barnyard, apples, wood, and sour cherry. Complex and inviting, really nice. Flavor contains many of the same components, but with a touch of candi sugar and an almost fruity note to the aspirin hop finish. A bit medicinal as well. Really well done, would never have pegged this as an American brew. RERATE 11/18/13. On tap at Chicago O’Hare airport. Will leave up my initial rating - much the same, but lacking some of the complexity of the original that I had - probably because it was a fresh keg versus a bottle where the brett had more time to work. Fruity orange and apple notes much more noticeable. By far the best beer I had in the airport.
