Ingredients: Water, Styrian and Saaz Hops, 2-Row Barley and Caramel Malt, Yeast and Granulated Beet Sugar.
Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

12 oz bottle, dated 03/03/06, served at cellar temperature in a Unibroue galss. A large, stable off-white head leaves moderately thick lacing atop a dark clear amber body with faint swirling wisps of yeast....huge, brett-dominated nose, sour cherries and apples, followed by old dry leather, thyme and rosemary, just a scintillating combination....sweet front on the tongue with a fair amount of dark malt and a growing dryness and bitterness that seems to creep up insidiously, woody character and notes of walnuts especially in the somewhat oily texture and thickness....very complex and certainly bearing a bit of resemblance to Orval but darker in the malts and not nearly as dry and refreshing....still a pretty nice try.

seems like the belgium brewery they visited and discussed on the bottle is Orval, one of my favorite beers. I think they did a wonderful job with this brew. Very dry in style and very refreshing. My favorite G.I. i have tried yet.

Bottle. One of my favorite Belgian styled beers yet & Absolutely my best American made Belgian. Orangish-gold in color with great spice aroma

Bottle. Strong pineapple aroma with notes of orange, bananas, and spices. Frothy bubbly head with orange/amber. Solid taste with pineapple like presence again, vanilla, orange, light alcoholic presence, acidic quality. Thick solid mouthfeel with a light bitter citrusy finish. Strong carbonation. Very good overall.

brewtopia 10/21/06. Aroma is earthy yeast, spicy with some fruit. Taste is the same with a spicy finish.

12 oz bottle via Monger (thanks james!) Pours a semi hazy copper with a large head. Typical Belgian yeast aroma with notes of vanilla and bananna. Somwhwat spicey flavors with some coriander, some apple & bananna and a fizzy crisp dry finish. Medium bodied. I do not care for this style much, but this is one of the best if the the best Belgian Ales i have tasted.

UPDATED: NOV 30, 2006 Bottle: Pours a golden yellow color with a medium white head. I smell a bit of banana in this one, with maybe a mild hint of chocolate. There also seems to be a very subtle hint of berry, but I cannot place which one. Tastes like a hint of chocolate bananas, with some sweet candy flavors in there as well. Again, I cannot quite place the subtle berry flavor that seems to be hidden behind the chocolate banana flavor.

This bottle was a gusher! Aroma of coriander, and other spices. Light brown in apperance with a decent head. The taste was warm, spicey, with some light malt. Medium mouthfeel.

Found this one bottled at Binny’s Oktoberfest in St. Charles, Illinois. Standard amber pour with a thick white head, crazy spices - lots of allspice and clove throughout. Finished a bit weak for the powerful start, but a decent Belgian.

Sample from a bottle at Binny’s "Fall Festival of BEERS." Hints of piney hops, tangy-finish, spicey with elements of cloves, allspice, and nutmeg. Orangey-amber. Another one of Goose’s good, but expensive, four-pack line.
