Ingredients: Water, Styrian and Saaz Hops, 2-Row Barley and Caramel Malt, Yeast and Granulated Beet Sugar.
Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

A nice simple sweet/slightly fruity aroma. I had lots of head even with a gentle pour. Medium strong lacing around the glass. A definite spiciness to it up front, maybe nutmeg. Finished very smooth, I enjoyed mine after letting it warm slightly. However, I canít taste too much hopiness.

Mineral malt flavor with variety of fruit notes, perhaps grape, plum, cherry, apple- too many to tell. And a rustic, earthy, open-air barnyard taste and aroma.

Bottle. Brown and hazy, kind of reminds me of muddy water. Good fruity, yeasty aroma, I can definitely smell orange and lemon in this beer. This beer is a bit too sour. The fruit flavors carry over into the taste. But, I canít get over the sourness.

UPDATED: DEC 10, 2006 good beer. medium full body. hazy, amber brown. citrus and flowers aroma. great head, lacing, and longevity. This is a healthy active beer. good on the senses. nice brew from Chicago.

UPDATED: NOV 23, 2012 Wow. Thanks to my summer Secret Santa for this one! Not often a brewer tries for an Orval clone, much less finds success with it. Light hazy orange, decent head fades away slowly. Aroma was brett, hint of barnyard, apples, wood, and sour cherry. Complex and inviting, really nice. Flavor contains many of the same components, but with a touch of candi sugar and an almost fruity note to the aspirin hop finish. A bit medicinal as well. Really well done, would never have pegged this as an American brew. RERATE 11/18/13. On tap at Chicago OíHare airport. Will leave up my initial rating - much the same, but lacking some of the complexity of the original that I had - probably because it was a fresh keg versus a bottle where the brett had more time to work. Fruity orange and apple notes much more noticeable. By far the best beer I had in the airport.

#936, on tap at Harry Carrys in Chicago. Because this is a belgian I have long avoided it, but it was really the only thing interesting on tap at this place and my pressure to go to Rock Bottom was not well accepted by the group. Dark and hazy with a thin white head. The nose is very creamy and malty with a hint of alcohol. The taste was actually pretty well balanced between yeast, malts, dark fruits and some plumb skin then with a hop sauce kind of end. Overall, pretty good, especially for a belgian.

Pours a five finger, white head that fades to a thin layer leaving a little lace. Cloudy amber color. Medium carbonation and medium bodied. Malty nose. Starts sweet almost raisiny, hops balance well, brewer says its loaded with hops but they are really subdued. Best so far from GI. Bottled on Mar 27, 2006, pricey but worth $2.99 for a 12oz bottle from Johnís Grocery Iowa City, IA.

2006 bottle. basic golden pour, tall head and moderate lacing. aroma is dominated by estery spiciness, a hint of brett funk, and not much at all of the "profuse amount of hops" that they speak of. Taste is orval-ish, but sweeter. pretty good beer overall, but nothing incredible.

12oz - 2006 - Aroma is very yeasty and spicy. Bread dough, coriander, lemon zest, peach, and white pepper. Pours bright orange with a huge head and great lacing. Flavor is citrus, yeast and spice all at once. Snappy hop back really rounds out the flavor nicely. Palate is tart and crisp. A very tasty American Belgian ale.

Spice is the predominate aroma and flavor from this Belgian style ale. Almost too much so when that spice comes up against the hops. Cloudy amber pour with small, white head. The nose presents pepper, clove and plastic Band-Aid. Clove is the top flavor, too. But there are hints of orange juice and tart cherries. Beneath the spice are the floral hops. I was not particularly in love with the combination which left an aftertaste of musty plastic. Lively carbonation. Medium body that comes across as clean, but then has a slightly sticky finish.
