Commercial Description:
Bottle conditioned.
Ingredients: Water, Styrian and Saaz Hops, 2-Row Barley and Caramel Malt, Yeast and Granulated Beet Sugar.
Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

had a few times, last time had against Orval .. . Pours with a nice healthy foam .. .honey and belgian hop aroma .. . pretty clean .. less funk than orval but good .. .

On tap at the Goose Island bar at O’Hare Airport. I wasn’t going to rate this until I realized that I was being charged $8.91 for an 8oz pour. This beer has a dry, dusty, yeasty aroma full of banana esters. Some sweetness and doughy aromas are also present. Mildly hazy orange-honey body with an off white head. Leaves some nice lacing. Served a little on the cold side and overcarbonated. Has a sweet, yeasty banana start. This also has some light anise characteristics, too. A little spicy and peppery in the middle. Seems to have a bit of citrus in the finish with a grassy, herbal, hop bitterness. The dryness here is rather acceptable.

golden hazy pour with small white head.aroma of spicy yeast and belgian candy. taste was not as spicy as i like but still good.

07 bottle thanks to j12601, thanks Jay. Poured a light orange-copper color with a thick, rocky off-white head that slowly receded to a thin layer and left some scant spots of lacing. Moderately spicy aroma with some pepper and clove, dry citrus (orange peel, tangerine), a bit of floral hops, a moderate yeastiness and some soft vanilla. Crisp, moderately tart entry with some light lemon that leads into a lightly sweet orange flesh leading into a moderate, funky yeastiness paired with a light spicy, floral hoppiness that finishes dry with soft hints of brett. Moderate carbonation and good balance between aggressiveness and subtlety. Overall, a nice, enjoyable Belgian pale that shows some finesse. Thanks again Jay.

Hazy orange our with a white head. Fruity aroma. Flavor of spices, citrus, pale malts, and some yeast at the finish. Very smooth.

Thanks for sharing, bro! 2009 bottle. Pours a crisp golden color with a medium white head. Aroma is fruity, some spices, yeast, and some hints of vanilla and molasses. Taste is bright, lemony citrus, and some mild spices. Well done!

2008 Bottle version. Thick looking amber beer with a strong head. The aroma is bitter, fruity and spiced, and the flavour is deeply spiced, fruity and bitter/roasted, with a yeasty finish. Overall a good beer.

Bottle from Wigan Beer Festival. Brown to amber colour with thin white head. Strong malt and yeast aroma, slightly sour, with a hint of fruit and some clove lurking in the background. Malt and yeast taste with hints of citrus. Incredibly long, dry finish. Creamy palate with lively carbonation. Superb.
