Commercial Description:
Bottle conditioned.
Ingredients: Water, Styrian and Saaz Hops, 2-Row Barley and Caramel Malt, Yeast and Granulated Beet Sugar.
Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

12oz bottle. Pours a cloudy amber orange with a small, dense, off-white head that leaves a moderate lace. Aroma is pretty mellow. Some funky spicing, orange citrus, sweet malts, an herbal hop character, and a bit of yeast. Flavor is malty sweet with some citrus and yeast bite leading to a finish that is pretty dry and spicy. Some pepper in the finish and coriander as well. Theres some kind of funky hop presence giving it an almost soap-like taste too. Palate is pretty medium to full with a real mellow tartness. Overall, not bad, but I think I was expecting more. A little too dull and mellow for me.

Tap at Sunswick. Poured a clear amber with a thin white head. Spicy and yeasty nose. Nice belgian style triple. Had some sweetness, and some alcohol bite, but not too noticeable. It also seemed to have some wheat notes. Bold strong flavor like a chimay white with more spice and kick,flavor wise that is.

Really enjoyed this beer. Nice balance/complexity of sweet, citrus and spicy undertones. Each sip gave me a slight dry kick in the palate making me thirsty for another sip.

Great beer. Pours golden with foamy thick, lasting head. Nose is sugary, Belgian, a little fruity. Pretty sweet over the palate, with a nice bitter touch. Very good.

2007 bottle in a Delirium Noel glass. pours a deep golden with a huge 3 finger white fluffy head... which diminishes to a quarter inch throughout... a thing of beauty in the proper glass. Matilda is a unique Belgian style ale from a US brewer... lots going on in the aroma - some Belgian yeast, sour lemons and some spice. very soft over the palate with a touch of sourness on the tip. spices are prevalent on the sides and the finish brings some bitterness forward. very good beer... my first Goose Island.

Bottle from Real Ale, hand delivered by Duff...eventually :p
Pours amber with an off white head that quickly settles to a film with a few remaining islands. Nose is sweet and bready, definite Belgian yeast, caramel and orangey, slightly floral hops. Taste is much the same, very fresh, with candi sugar, caramel, orange zest and a nice hop bitterness in the finish. A sweeter, less complex Orval if you will...maybe needs aging?

Bottle from Bitter Virtue, Southampton, Hampshire, courtesy of my dad, cheers dad, consumed 29-12-08. Pours reddy amber with a nice white lively, cheeky, bubbly head, it looks really decent. Starts off with some sweet tangerine at first but there is quite a lot of Belgian yeasty characteristics to this. There is also a Biere de Garde quality to this also although a sweet version and with plenty of fudge swishing about and some overipe fruit its really quite an interesting beer and not at all what I expected.
