Commercial Description:
Bottle conditioned.
Ingredients: Water, Styrian and Saaz Hops, 2-Row Barley and Caramel Malt, Yeast and Granulated Beet Sugar.
Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

RBSG 2008. This sample was much better then my previous. Much cleaner, with less yeast floating around like a stew. The flavors all came out cleaner giving a nice citrus tart finish. OBF 2008. Interesting beer, but it didn’t come together for my liking. Strange apple cidery flavor, estery, but almost a rotting fruit sort of note to it. Flavor was very muddy and yeasty tasting, like it was mixed up. The fruity flavors and spiciness in the finish just didn’t mix well for me.

(12 oz. Bottle courtesy of Headbanger). Aroma is a light malt scent with some citrus to it. Color is orange amber with good carbonation and a thick tight head. Taste is spicy and fruity. Starting with a medium body it goes down with a spicy feel. Finish is spicy with fruity yeast tones and a mild bitterness. After taste leaves you with a faint sour taste. This is an interesting brew that reminds me of Orval.

Draught. Pours slightly hazy golden with a small disappearing head. Aroma is light fruits, yeast, and spices. Flavor is the same, with an interesting mix between the various flavors. Somewhat hard to describe, but unmistakably Belgian in character, and a very good one at that.

Bottle 1423. Bottled on 11/26/07. Pours a clear golden orange with a pale beige head. The aroma is prevalent in spices with some notes of a citrus tang. I’m not that well-versed in spice aromas, but I can say that this reminds me of an overly-spiced pumpkin pie. The flavour is much like the aroma, lots of spices but not intense enough to make this a chore to drink. The fruit flavours, which resemble pears and orange rinds, give a balanced roundness to the spices. The finish has a light spiced bitterness, but is pretty smooth for the most part. Lots of yeastiness in the finish too. I don’t like spiced beers, but this isn’t too bad.

My first experience with this beer, though, wasn’t an enjoyable one. I cracked one open shortly after my Dark Lord Day road trip. The spices were overbearing. I think aging this, much like other spiced beers I’ve had, really balanced out the flavour.

Goliath thanks for the brew Bottle poured into a sniffer produced a good finger worth of head that faded away to a thin laver of lace Aromas of bubblegum and spices filed my nose Tasted great for an American Belgian just the right amount of sweetness and spice well done the mouthfeel is about what I wanted in it as well just enough carbonation to keep it interesting I thought it was a fine beer for a Belgian clone and would drink it again

12 oz bottle (2006) from trade with Acknud. Pours a golden and slightly orange color with a bit of haziness. Quickly lost fluffy white head. Sour fruit notes in the aroma, but just what I needed. Quick punch of spice in the initial taste which is followed by a great yest and bread-like taste. Malty sweetness compliments the amount of hop bite. Somewhat lite on the palate. Good Belgian inspired. Would like a fresher bottle to compare it to.

Bottle Pours out a hazy amber topped with a small white head. Aroma of fruit and spice. Tast of yeast a little citrus. More of the fruit and spices.

Bottle courtesy of fiver29. Pours a hazy honey color with one finger off-white head and spotty lacing. Nose is chardonnay grapes, peach, apricot and spicy yeast. Taste is sweet citrus, yeast, banana and spice with a funky, lightly sour finish. Medium mouth feel. Very refreshing beer. Thanks John!
