Commercial Description:
Bottle conditioned.
Ingredients: Water, Styrian and Saaz Hops, 2-Row Barley and Caramel Malt, Yeast and Granulated Beet Sugar.
Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

Descriptors: golden amber appearance with a little froth; crisp, fruity, yeast flavor with a dry finish. Has a pleasant acidic "bite" which I find to be the most notable characteristic of the beer.

12 oz. 2006 bottle , from my brother. Hazy amber with a big, billowing yellow/tan head that collapsed over several minutes. Aroma of yeast, earth, lemon, light stone fruits, and spice. Body is light to medium, complemented by lively effervescence, and a mildly acidic, clean palate. There is some sourness in the flavor that counters a honey like sweetness, and at the finish a spicy bitterness comes on strong. Very drinkable and thirst quenching.

Nice gold pour, decent fruity head. Some earth, Spicy fruit, slight sourness to it, very drinkable for the alcohol content, could get in trouble with a few of these! Good drink!

Bottle sampled. Pours a orangish gold color with a two finger white head. Aroma of fruit esters, citrusy hops, yeast, coriander, and spices. Flavor of caramel malts, citrus, yeast, and some dry fruits with a bitterness finish

Faintly sweet, spicy aroma with a slight acetic twinge. Honey gold in color with white speckled head. Taste is same as aroma with funky brett type sourness to it. $3/12oz

I remember buying this at Holiday Market in Royal Oak...my thoughts were: decent Belgian, bit pricey. But I’d like to see the local distributors bring it into Missouri so I can re-rate...hint hint hint

Sample, at the Mondial de la bière 2007, savoured June 2 2007; eye: copper, no effervescence, lightly hazy, tiny ring of almond head; nose: nice floral hops, caramelized malt; mouth: caramelized malt, milky, lightly bitter hops, finale is surprisingly thin and creamy at the same time in caramelized malt with a hint of hops, creamy texture, medium body, average carbonation, lightly bitter, mildly sweet; overall: fine FRANÇAIS Échantillon, bue au Mondial de la bière 2007, savourée le 2 juin 2007; oeil : cuivrée, pas d’effervescence, légèrement voilée, petit anneau de mousse amande; nez : beau houblon floral, malt caramélisé; bouche : malt caramélisé, laiteux, houblon légèrement amère, finale curieusement douce et crémeuse et en même temps malt caramélisé et pointe de houblon, texture crémeuse, corps moyen, carbonatation moyenne, légèrement amère, moyennement sucrée; en résumé : bien

On tap and served in a shaker (this bar didn’t appear to have much of a selection of glassware). This beer poured a clear golden/amber with a thin head of tight beige bubbles. Some spotty lacing was left around the glass. The aroma of the beer was made up of orange peel, caramel, and bread. The flavor was similar but also included some lightly spicy yeast esthers as well as a bit of candi sugar. The mouthfeel was medium-bodied with light carbonation. A nice beer from Goose Island.
