Commercial Description:
Bottle conditioned.
Ingredients: Water, Styrian and Saaz Hops, 2-Row Barley and Caramel Malt, Yeast and Granulated Beet Sugar.
Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

GABF 2005. Solid gold body and a medium-sized, uniform, foamy white head. Major elements in the aroma are horse saddle and wild flowers. Semi-dry flavor with nice rich pale malts, subdued phenols, and floral hops that last through the finish. Medium bodied. This is a very good, American-made Belgian ale with apparent allusions to Orval.

Bottle. Full head upon pouring. Flowery and pleasant. Bronze appearance and slightly sweet. A good example of this style.

Mashed fruit and lightly spiced bread pudding in the aroma. Golden in color with a finger thick firm head. More bread pudding, but spicier in the flavor than smell. Has a sweetness that is more fruity than sugary and that pervades the whole affair. Very nice beer.

Bottled. Dark amber coloured with a medium sized off-white head. Malty with notes of yeasts, citrus, caramel and also have a floral feel to it.

Bottle. Cloudy orange-copper body with a small, white, creamy head. Aroma of vanilla sugar, peach, apricot, and cookie dough. Sweet caramel flavour along with herbal hops, vanilla sugar, and cookies. Quite nice.

Orangey and hazy, with a foamy large bubbled head. Aroma has a good dose of brett, spicy, wet leather, banana, wet hay. Rounded and sweet up front with a touch of yeasty bite, a mild earthiness, spicy finish with a medium bitterness.

Draft: Lightly hazed pumpkin. Milky, sticky white head. Gorgeous peppery hopsack aroma dotted with citrus rind, flowers, honeyed malt, and a light yeast tone. Just a touch of toast, dough, and honeydew. Soft body with firm, zesty carbonation. Exquisite grassy, floral hop flavors right off the bat. Resounding herbal bitterness is livened by juicy melon and soft doughy malt notes. Mild, yet chalky and gritty Belgian yeast moves in to momentarily stabilize the hops while fluffing up the delicate malt flavors. Finishes with a light musty yeast note and lingering herbal, flowery hops. The brewer tells me this now contains an Orval yeast strain, which differs from a past Kölsch strain. And I query him how about throwing a cork and cage on a bottle-conditioned 750ml. Simply fascinating rendition of a Belgian hop behemoth.

Orange in colour, very large off white coloured head, excellent retention, great lacing. The aroma is of orange citrus, floral hops, light funk, spicy pepper, wild yeast. The flavour has some great spice, brett, lots of orange zest, very light sourness, herbal and quite floral. Very full mouthfeel, medium body, high carbonation. Finishes long and spicy, quite creamy. This is excellent. Almost as good as Orval, very, very close.
