Ingredients: Water, Styrian and Saaz Hops, 2-Row Barley and Caramel Malt, Yeast and Granulated Beet Sugar.
Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

Bottle with 2013 on the label. Golden with a thick frothy head. Has lots of character that certainly hides its strength, with plenty of yeasts, pale malts, hints of fruit - very Belgian in style and very good.

Pour to 8oz nonic pint. Shrink from Whole Foods, deemed un-sellable. Bottled November 2014. A healthy, rich, clear copper pour with ephemeral head. Bright nose of belgian yeast clove with flowers and over-ripe apple, subtle banana. Flavor is clean and delicate ripe apple with smooth and tamed yeast presence. A bit sweet and juicy on the peak and finishes dry. Over a year old and it still smells (and tastes) quite nice, even to one who is not a fan of belgian yeast in ales. Getting this one for free, not a bad deal. Not the best ale I’ve enjoyed, but one of the more palatable and balanced Belgians I’ve had.

This is the 2014 bottled product in a 750 ml bomber. A nice medium orange amber color with sparse white head and fruity nose. The taste is complex and slightly elusive, but definitely suggestive of dried fruits. Low bitterness. 3.9.

(Goose Island Matilda) Bottle 765 ml from Dranken Geers, served into a teku at home. ABV 7% Bright copper orange colour on the body, clear, with lazy activity in it. Tall and thick white head sittin on top, soapy, with average retention. Aroma has malts, sugars, apricots, light berries, light barnyard. Taste has floral notes, with a clean profile, some malts, sugars and apricots again, cookie dough, faint caramel. Thin body, soft carbonation. Sticky palate. Nice.
