Commercial Description:
Bottle conditioned.
Ingredients: Water, Styrian and Saaz Hops, 2-Row Barley and Caramel Malt, Yeast and Granulated Beet Sugar.
Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

bomber from holiday market. bottled june 10th 2009. pours orange with a dense white cap. the pour keep getting hazier as i re-fill my tulip. big wild yeast nose, funky, sour, grassy, excellent. the flavour is similar. the base would make a great belgian ale but the addition of brett really makes this one shine. i really enjoyed this one and i wish i bought more.

Sampled on BQ2010. Bottle. Pours a dark brown body. The nose is yeast and malts. The flavor is some alcohol, yeast, floral, and wood!

Tried on Beer Quest 2010 with all the guys. This was number 11. Pour was not amazing but went up from there. The aroma of yeast and malts. The flavor is complex. Hard to distinguish. Some yeasts, flowers, and woody.

33cl bottle into trappist glass, aroma is sweet and yeasty, a little spice. Taste is belgian yeast, sweetness and fruit, apples, a little malt in the background and a pleasant bitter fruity finish. Very nice.

Have a scant old rating note for this from the brewpub in Chicago: spice, malt, yeast aroma. lemon and bread taste. dry fruit aroma. That’s all I’ve got other than a score.

Hazy orange, whitish head. Yeasty, estery, floral aroma. Taste is fruity, esters, floral, light alcohol.

Cloudy orange, thin beige head. Ripe fruit aroma with some tartness, honey, and clove. Taste is not overly sweet or bold but is mild and smooth with peach and pear notes. Maybe this bottle has some pretty good age on it.

12 oz bottle Pours a nice orange with a small off white head. Taste is close to an abby style with hint of citrus a bit heavy on the spices for my taste.

Lovely beer. Tasty too. Poured with a grand foamy, frothy off white head and great lace. Color is a medium amber. Aroma is very yeasty, malty, a little hop, and a bit vineous. Flav’s the same but more full. Very good body and carbonation. Satisfying. Don’t pick up much on the alcohol. Nicely balanced. Finish is good. Kind of on the border between a drinkable beer and a special. I’d imagine that would be ideal from the brewer’s perspective. Whatever.
