COMMERCIAL DESCRIPTION
Night Stalker, as an homage to the Chicago-based television show. Night Stalker is a jet black, dry hopped Imperial Stout, extremely rich and full flavored with malt and chocolate followed by a bright dry hopped aroma. It is the same base as our Bourbon County Stout, but instead of aging in Bourbon barrels, we dry hop it like madmen. ABV Ė 11.7% IBUís Ė 60 Color Ė 100 Aroma Hops ĖMt. Hood & Simcoe Malts Ė 2-Row, Munich, Chocolate, C-60, Roast Barley, Debittered Black

Bottled: 19NOV12, reviewed 18DEC12 This is the freshest Iíve had this beer, and itís not a good thing. latest score based on latest bottle.... Pours black with a finger of nice mocha foam. Smells, like itís got sage, fruity pebbles, molasses and more sage and burnt rosemary (scorched). Nose is aberrant and sufferable. Taste is mostly dark malts, molasses, licorice, and bitter hops with some grapefruit. Medium bodied with moderated carb and a dry finish. This beer has waaay too many hops and is really dreadful right now. on 14JUL11 - 3/3.5/4/4/4 - 3.85 Side by side of 2010 and 2011 2011: Pours a black ale with a transient mocha head which is less than a finger. This falls to nada leaving a slate surface. (3) 2010: Pours black ale with a single finger of mocha head which falls to a solid sheet of the same. No lacing. Clarity difficult to assess. (3) 2011: Smells hot, alcoholic. Hops are strong and resinous. Hints of roasty malts and a small molasses tone underneath. Man, I canít believe this has so many hops. Reminds me of Black Flag by Beer Valley. Lots of hops. (3.5) 2010: Alcohol is strong here. There are plenty of graham, malt, toasty tones with some prunes. A little bit of pepper on the nose. (3.5) 2011: Wow, the molasses is super strong on this. Plenty sweet with good hop presence, accented by some alcohol. The sweetness has some high quality quad tones to it: dark stone fruits, molasses, graham. (4) 2010: Rich and sweet. Molasses comes through even more than in the 2011. Graham crackers, brown sugar, licorice. This is super sweet. Not as sweet as Dark Lord, but sweet nonetheless. This would be great in the dead of winter. (4) 2011: Thick and chunky. Low carb. Long syrupy finish. (4) 2010: Viscous. Smooth with low carb. The finish is softly dry with a long velvet finish. (4.5) 2011: Good beer, wish the nose was a little more in line with the flavor profile. The alcohol seems a bit strong as well. (3.5) 2010: This is much better with a year on it. The alcohol has died down a bit and offered up a nice beer. (4) Serving type: bottle

On tap at Uncle Mikeís Highway, 2010 or 2009 version. Dark black with a thin tan head. Aroma of coffee, peated malt, chocolate, oak and alcohol. Taste is rather earthy with chocolate, peated malts, smoke, booze, oak, mild citrus, licorice, faint vanilla and some soy sauce as its warms. Rather nice beer.

Strong robust malt aroma with sweet wood notes. Black color with a medium dark brown head. Moderate malt beginning with a sweet middle getting bitter in the finish.

Draught@RNH. Dark opaque black color, tiny brownish head. Aroma has coffee, wood and alcohol. Medium bodied. Lots of dark malts, rye bread, wood, and punch of alcohol. Sticky. It feels like aged in oak. Quite simple although somewhat tasty.

Loses points in the side by side comparison with GI Big John, which features chocolate and more robust coffee flavors in my opinion. Still, this is not bad. Not my favorite from GI though. Malt, roasted flavors are muted and thinner here.

22oz bottle. Pours black with a dense brown head that leaves little lacing. Aroma is thick roasted malt, umami and molasses. Taste is medium to heavy sweet, medium bitter with dark roasted malt, dark chocolate, soft carbonation and oily texture. Long sticky thick roasted malt finish, dark chocolate bitterness mixed with fairly well hidden alcohol. Serious stuff!

Described as a very hoppy imperial stout - although I have to agree with a lot of the other reviewers in saying that the flavor is a bit different than expected. There is some "funk" in there. Not a Belgian wild yeast funk, more of the funk that you would get in a questionable Ukrainian or Russian pilsner. But here it works and adds to the complexity of the brew. Itís an imperial stout that hides its ABV pretty well, with some funk, and medium bitterness.
