Night Stalker, as an homage to the Chicago-based television show. Night Stalker is a jet black, dry hopped Imperial Stout, extremely rich and full flavored with malt and chocolate followed by a bright dry hopped aroma. It is the same base as our Bourbon County Stout, but instead of aging in Bourbon barrels, we dry hop it like madmen. ABV – 11.7% IBU’s – 60 Color – 100 Aroma Hops –Mt. Hood & Simcoe Malts – 2-Row, Munich, Chocolate, C-60, Roast Barley, Debittered Black

Bottle at SBWF. Very black with a good looking medium tan head. Nice aroma of roasted malt, dark fruits, chocolate and hops. The taste was very good, roasted malt, chocolate, dark fruits. An excellent thick mouth feel, it was a real pleasure to drink this beer.

Amazing aroma of chocolate, malt, floral and piney hops, booze, and cocoa. Appearance was super dark black with big dark tan head excellent lacing. Taste wow!! Dark chocolate faint espresso, coffee, and big piney and floral hops. Palate again was outstanding velvety creamy milkshake like feel with an underlying fine prickly carbonation. The ABV is extremely well hidden with faint vanilla on the finish. World class beer and a definite regular on my tasting schedule. A+

So this was the stout I bought for St. Pat day and what a stout it is. dated 02/06/2011 bomber poured into my snifter. fuzzy black color with a thin tan head. Opening the bottle gave me the aroma of a dusty old library. But a nosing of the glass let me get a citrus punch like blood oranges but with a tangy tomato sauce underneath. I know this is weird but i will say there is also an umani meaty quality to it. The taste is a little sweet but than goes into a roasted coffee. One of the most complex and unique imperial stouts I have ever had

22 oz. bottle, sent from Glouglouburp (thanks Dany), pours jet black with a small brown head. Aroma is incredibly complex, with the hops and pronounced dark roasted notes upfront, with many different subtleties such as licorice, deeply roasted espresso, caramel, toffee, dark fruits and wood. Flavour is no less dense - this is truly fantastic. Very darkly roasted malt and dark espresso begin, with complex notes of caramel, dark fruits, wood and licorice layered into this deep, dark, dense body, with a huge blast of hops that comes in toward the end and lingers wonderfully. Palate is quite oily, silky, velvety, etc. and quite viscous. This is outstanding.

Bottle, pours totally black with creamy light brown head.... aroma is hoppy, caramel, Licorice, raisin, coffee...the flavor is very nice... this is one of the best beer I have had... ever!

Bottle: Thanks to sfhodense. Brown head, that disappears quick, on top of a pitch black beer. Smell liquorice, dark chocolate, espresso, burned brown sugars, burned malts, burned wood, hint of coal. Taste is a deep dark complex experience: dark chocolate, spices, coffee, espresso, liquorice, dark dark fruits and other dark dark ingredients, vanilla, all so soft and well packed. Good bitter dark coffee chocolate aftertaste. Low carbo, full body, silky mouthfeel and a oily texture. Near perfect!

Perfect pitch black body. Brilliant aroma of heavy coffee malts, mild hops, incredible depth. Taste is overwhelming. Raisins, vanilla. Though hard to describe this is clearly world class beer, abundant in character and easily keeping its distance from other venerable beers.

Thanks countbeer for sharing i believe. Pitch black colour, poring with an oily texture. Deep caramel, chocolate and hoppy smell. Tastes lovely hoppy, chocolate and deep. Oily mouthfeel, creamy, deep and long aftertaste.

Had it twice: 1st time on tap at Tommy Nevin’s Frankfort on 3/2/13 and the 2nd time on 3/28/13 from a bomber (bottled 11/19/12 #1321). Pour - Dark, oily, and pitch black with very little head. Nose - Dark fruits, bitter hops, orange peel, and a bit of roast. Almost like a chocolate covered orange. There is that umami soy saucy savory flavor too, like in Stone RIS or Weyerbacher Old Heathen. It’s rich, savory, and roasty. Taste - The umami flavor is here too, coming through with a savory, rich, roasty, soy sauciness. The taste is odd but I like it a lot. Lots of hop bitterness on top of a subtle roastyness. Along with the hops is a bit of citrus that is like orange peel mixed with a cherry sweetness. Tons of overlapping complexity and notes of both bitter and sweet. I can see why people say it’s infected, but I really do not think it is. There is this bitter, sour, funky quality to it, but it is enjoyable. It would be a shock though if you weren’t expecting it. Mouth - Oily and on the thick side of medium. Definitely fits this brew. Overall- I really enjoyed this brew. It was very different and unique, and it was put together well. It did not taste wrong or infected to me. I think the dry hopping mixed with the roasted flavors of the base stout creates both that soy sauciness and the funky/sour notes. I have had this twice, once on tap and once from a bomber, and it tasted the same - actually more complex and balanced from the bottle.
