Night Stalker, as an homage to the Chicago-based television show. Night Stalker is a jet black, dry hopped Imperial Stout, extremely rich and full flavored with malt and chocolate followed by a bright dry hopped aroma. It is the same base as our Bourbon County Stout, but instead of aging in Bourbon barrels, we dry hop it like madmen. ABV – 11.7% IBU’s – 60 Color – 100 Aroma Hops –Mt. Strong pine and citrus aroma, with a touch of malt undertone. Not what I was expecting from a beer that pours an opaque black with a rich milk chocolate head. Nice rich creamy mouthfeel leading to citrus, chocolate, vanilla and roast playing together in a delicious stout. I’d probably put this under American Strong Ale rather then Imperial Stout, but wow do I want more of it.

Bottle. 2/19/2010 date. A: Black in a way which would please Batman. Thin, dying mocha head. Lacing. N: Vanilla, cocoa, coffee, black peppercorn, rye, earth, milk chocolate, a hint of toffee and caramel. Smoke and almost like a rough tar. Not gross like that, but it seems like the right description somehow. Light oxidation from its 5 years of age. T: Quite sweet, but not cloying like the latest iterations of Bourbon County Stout. A bit hoppy still. M: Thick, motor oil body, light carbonation, alcohol is very well hidden. O: This was the big time, long ago, before In-Bev took over production and turned BCBS into a call for insulin. Only minor oxidation after 5 years, too, which is impressive.

It’s thick as oil and hangs in thick lace on the glass inside. Smoke and dried fruits rises from the glass estimates vinous association. The taste is very rich and creamy and is heavy in the mouth. Prunes, grapes, plums and port wine fill for the taste buds with the distinct flavor of smoke and oak.

Bottle. Pours black with a medium light brown head. Aroma has lots of chocolate, coffee, lots of roasted notes, light burned wood, lots of hops, tobacco, licorice and some weird savory thing going on. Seriously reminded me of the way seaweed is salty. Taste is coffee forward, chocolate, roasted malts, licorice, bitter notes, tobacco, same weird savory thing going on. Good but pretty damn weird.

22 oz. bottled poured into a snifter. Jet black. No light passes through. Nothing resembling a head except a slight coating of mocha bubbles that quickly fade into a ring around the edge of the glass. The smell is booze primarily. Chocolate comes a close second. Coffee and roasty flavors linger in the background. Chocolate dominates the flavor. Dark fruits in the middle flavor that quickly fade to coffee bitterness. Thick. Coats the mouth. Low carbonation. Delicious.

Bottle shared by Pavlov Badzewski. Colour...jet black with a thin tan head. Nose...boozy, with molasses, chocolate creme, notes of coffee and burnt marshmallow. Palate...quite viscous, chewy and coating, with massive dark chocolate, Tootsie rolls, unsulfured molasses, Devils food cake and Milky Way Midnight. The finish is long and quite cloying.
