A hoppy red ale brewed for Alison, one of Goose Island's finest, and her soon to be husband Nate. As with many flavorful special occasion brews, we have used considerably more malt resulting in a beer higher in alcohol. Cascade hops were used exclusively to create an assertive hop character, and dry hopping in the fermenter added to the citrus & spice aroma.

Draught; Clybourn Brew Pub: Dark maroon and slightly opaque, minimal white ring of bubbles. Wonderful piney-hop aroma with a fresh lemon bitterness. Dark caramelized bitter goo on the tongue – seems a bit too dark colored for such wonderful Cascade hop bitterness. There is a good cherry fruitiness that adds another dimension to this bitter, malty treat. An ale I wouldn’t mind having for my wedding. . .

As expected from an all Cascade hop ale, the aroma is quite citrusy. The taste is dripping with fresh hop nectar. There are notes of citrus and grapefruit, along with a dominant general fruitiness. There is a subtle sweetness from the malt which helps to balance and pick up the hops a bit. This beer is definitely a hop celebration/ oriented beer, the malt component only serves to highlight the hops. This is a pretty good example of an all Cascade hop beer.

Clear ruby body with a nice, white head. Nice balanced aroma of sweet malt and piney hops. Caramel, subtle fruity esters, pine resin, grapefruit and whole grains. Creamy, smooth palate that is very easy drinking. The flavors are great and further show the balance between the strong malt backbone, the bitter but fruity hops and the doughy, fruity yeast. Finishes with a sharp, pleasing bitterness, giving the tongue a nice coating of saliva, eagerly wanting more.
