Pivo, the Czech word for beer, is a Pilsner-inspired ale that has a bold hop start, a floral middle and a clean, crisp hop finish. With refreshing fruit notes coming from our own ale yeast, this beer is a nice interpretation of an old classic.

On tap at Clybourn on Oct 2, 2009... Anyways, this came to the table looking golden and hazy with a small white head... Aroma was of floral, noble style hops... saaz came to mind... Flavor was milder than some classic pilsnerís but I actually liked about it... It was spicy from the hops or yeast, but not as much as a pils... Also had a slight fruity character... A little heavier body than a pils... Pretty easy drinking and smooth with some great pilsner flavors

Cask at GI- Golden color, white head, nice lace. Earthy aromas, great balanced flavors. Cask adds a fantastic element. Simple, clean.

Draft at Clybourne. Pours pale golden with a white head. Faint aroma of european pale malt and herbal hops. Medium bodied but with a slight watery texture. Flavor of sweet and bready malts, pilsner malts, with a tame saaz like hop bitterness. Clean finish. Interesting, but struggles for identity between a blonde and european lager, and falls somewhere in the middle.

Tasted at Goose Island Clybourn. Pale golden with a medium-sized off-white head. Lots of lacing, low head retention. Peach/apricot aroma. Rye, wheat and overall grainy flavor, slightly sour finish. Smooth mouthfeel.

surprised iíve never had this. i only allowed my friends to get this because the waitress suggested it and i couldnít say no in time. but! it wasnít bad at all. i even was expecting shit, but this was surprisingly, very hoppy. i guess i was expecting a paleish lager, but there was plenty of flavor in this. would love to try again.

Imperial pint poured at the Wrigley Field brewpub Tuesday, the 16th of May, 2006. Unfiltered pils color, dark sunshine gold the color of a daisyís center. Nice, retentive white head. Smells like rough grains with a hint of soap. Nicely sweet, but for some reason Iím afraid that itíll make me sneeze. Tastes great, very crisp. Dandelions, grain. Very rough and raw. Thereís a sweet finish, like wild flowers and mild fruit. Too bad they didnít serve this at the game! Itís a great session brew: crisp, flavorful, and refreshing.

Ughsmash (7508) - Pewaukee, Wisconsin, USA - APR 29, 2006
On tap at Clybourn. Poured a clear, dull, pale golden with a short cap of white head.. some lacing. Soft biscuity malts, miscellaneous sweet malt, and yeast came through on the nose. Crisp pils and other sweet malts in the flavor with some basement-y yeast and light fruits. Crisp, refreshing, and lighter-bodied on the palate... there were some off-balanced alcohol highlights as it warmed up a bit. Nothing great, but was enjoyable.

Tap: Poured like a lager with some fizzy white head. Aroma was of some citrus and some grass. Taste was very light. Hops were detecable for a brief second, but the beer finished with a hint of malt and some skunk funk. Thin bodied. Not very good, even for a lighter beer.

With a really nice mix of Iím guessing Tettnanger and Saaz, the hops in this burst forth in what Iíve noticed is a similar-tasting malt base used in all their lighter-hued beers. Body too thin, but the hop profile is rockiní.

Tap at clybourn...Poured a light golden with airy white head. Aromas were kinda earthy, with some citrus notes, but overall very light. Mouthfeel was less than expected, and flavors were similar to the aromas, with some hops noted up front. Overall, not one of the breweryís best.
