The Tripel is typically brewed with Pilsener malt, sugar, noble hops, and Belgian yeast. This one is fermented with two seperate strains of Belgian yeast to layer the aromas of spice and complex fruitiness. Golden in color with a subtle hop nose, the Tripel hides the alcohol well behind the dry crisp finish.

On tap at Birdsall House during their Goose Island event. Pours a clear gold with a thin white head. Faint musk and citrus, sweet honey. Smooth and sweet, soft candy and musk. Sweet finish with a touch of alcohol.

Draft at Sheffields (Chicago, IL). Pours a glowing straw golden hue, decent haze, small offwhite frothy head dies to a tiny film. Aromas are light estery pear, Pilsner malts, light yeastiness with a touch of fruitiness, bread dough, and light citrusy lemon hopping. Initial is a blast of pear, sweeter with bready malts, cookies, some light fruity yeast, lacks spice with cool honey and vanilla. Light lemony hops. Finish is sweet and mellow, a bit dissappointing.
