COMMERCIAL DESCRIPTION
Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

This version was treated with Orange Blossom Water, Basil, and Lemon Balm and first available at Belgian Fest 2012

On tap at Belgian fest. Pours a hazed yellow. Light earthy aroma sweet grass lemon. Light crisp. Tasty lemon grass. Tea. With a funk crisp favor. Some bitterness. Good. 8/3/8/4/15

Draft at Belgian Fest. This was a huge surprise, completely different from straight Sofie. Pours an attractive deep gold, lightly hazed with a white head that persists. Nose shows soft citrus blossom, basil, light lemon notes. Really clean and works with the sofie base. On tasting, the bitterness is elevated due to the basil. Nice and refreshing with citrus. Clean and crisp, drying finish. I really like this one a lot.

Draft on tap at Belgian Fest (Chicago, IL). Pours a dulled well hazed golden yellow hue. A bit dulled and darker, with frothy bigger cakey brighter white head that sticks around and laces well. Aromas are oranges, orange blossom. Gentle oak, wild bretty dryness, gentle basil spice, lemons and gentle white wine. Initial is lighter bodied, offering some gentle bready and wheaty grain malts, some distinct orange, florals. Orange blossom, lemons, gentle grass and florals. Distinct basil and earthy spice into the middle. Some straw, grain, bread. Straw, grass, some dryness and lemon balm as we start moving on. Spice, gentle dryness, oranges. Gentle dryness, brett, gentle funk mixes with subtle oak, white wine. A touch of peach and melon. Really nice beer, orange blossom and basil adds a distinctly interesting layer. Nice.
