COMMERCIAL DESCRIPTION
Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

UPDATED: JAN 30, 2016 On tap at Cork ’n’ Keg, Raymond, NH in tulip glass. Aroma is Belgian yeast with fruity esters. Appearance is hazy pale yellow with finger-width white foamy head that with only fair retention and mild lacing. Taste is largely as aroma with mix of sweet fruitiness and tart--definitely a champagne-like quality. Palate is light-to-medium bodied with thin texture, soft carbonation and dry, tart finish--very reminiscent of champagne. Overall, a slight variation on a straight saison--not earth-shatteringly different, but enough to notice.

2015 version on tap at the Kinsale, 12/23/15.
Gently hazy, soft gold body has a small white head that fades to cover/ring.
Citrus juice, vanilla, light earthiness and peppery notes from the yeast, followed by a good deal more malt character. Probably a bit heavy-handed in that regard. Odd plaster (not in the good way) and light, dried glue. Not much going on wild yeast-wise. Perhaps the brett character hasn’t had time to emerge, which is too bad, because it could badly use some brighter, more varied, yeast notes.
In the mouth, wow has this gone downhill over the years. Where this used to be lightly sweet with soft spice character and a more delicate malt and yeast interplay, I’m left scratching my head and wondering if I’m just drinking a Hoegaarden. Granted, there’s a little bit more going on than that, but not by much. Sweet malt, with less than an impressive carbonation/texture seems to drown the spices and you’re left with citrus and pepper soaking in sugar. Light astringency and an odd vanillin character. Nothing offensive here, really, just nothing particularly interesting/good going on. Thank god Matilda hasn’t taken such a downturn....(yet??)

Big Bottle 2013 (yes I know I shouldn’t keep these beers so long) What a beer, an original American Saison that reminds me of my months in southern Belgium 3 decades ago. And remembrance of this beer tapped at the Clybourn pub when she first surfaced. So two years hasn’t dented the aroma flavor or grandness of this simple yet exquisite offering from a brewer, despite it’s present owner’s reputation, carry’s many similarities to beers from "back home." Enjoy it now or in the future, Cheers/beers!

UPDATED: DEC 25, 2015 Christmas Eve Crispy Wings and Family Beer Tasting. Aroma is very light funk, floral spice, something fruity...maybe light grape must or apple skins. Taste is light yeasty / funky / apple juice that build up some nice floral coriander, vanilla and gets a tad bitter at the end. Better than expected!

Sample at Leuven Innovation Beer Festival. Poured clear gold blond, white foam head. Hoppy, orange, grapefuit, spices in the aroma. Taste is soft, mild, grain, mango, grapefruit. Mildly fizzy, balanced aftertaste. Leaves the hunger for more.

675ml bottle from LCBO. 6.5% alc.vol. pours a clear gold colour with two finger of lasting white head. Aroma of grapefruit and some caramel. Taste matches the aroma. Citrus flavour is pronounced. Light body with lively carbonation. I don’t taste the typical Belgian flavours tho. Excellent farhouse ale.
