COMMERCIAL DESCRIPTION
Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

750ml bottle pours a clear golden color with a 2 finger white head that retains well and leaves some spotted lacing on the glass. Tiny beads of carbonation rise to surface. Aroma is light fruits, particularly orange zest with some yeasty notes and grains. Taste is a light fruity and malty sweetness with a hint of lemon tartness and orange zest bitter finishing with some dry yeast. Light to medium bodied with some generous carbonation. A decent brew for the style, but nothing special.

Pours a hazy gold. Has a strong citrus, wheat and yeast aroma. A very strong citrus and grapefruit taste with wheat, yeast and light spices. Very dry aftertaste from the yeast and wheat.

Bottled. Hazy yellow pour with a small white head. Aroma of citrus, hay, pear, and grape. Fruity and sweet, with biscuit malt and a thick body that keeps it a bit too heavy, especially for 6.5%. Still, enjoyable beer.

The body is light and hazy with a bright straw yellow color when held up to the light. The head on top is tall fluffy. It quickly settles down to a tighter half inch cap of foam that hangs on well and makes some spotty lacing. In the nose I pick up notes of funky yeast, sweet fruity candy and faint citrus with some light spicy phenol as well. The aroma here is lovely and just pulled me in. On the tongue the sweet fruity candy like notes meet the dry funk of the yeast as well as the mild phenol spice and pale wheat like malt. The balance here is just on the dry side and in the finish it adds just a touch of tart citrus and hop bitterness which yields one heck of a refreshing and modestly complex brew.
