Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

I poured a 12oz bottle dated in late March. It poured a light, straw yellow with a hint of light orange to it with a billowing white head. It smells delicious, a nice blend of yeast and citrus aromas with light sweetness. It tastes excellent as well. Once again, a great mix of breadyness and citrus flavors with a subtle sweetness. It drank very crisp and didnít lose any carbonation in itís six months after being bottled. This one is very, very drinkable and delicious on tap or out of the bottle. I canít wait to try this one aged.

Tasted on 8/10/11 from a 12oz bottle purchased at Lush Roscoe, 2011 vintage. Pours clear golden-yellow with an average white head that slowly recedes to a bit of whispy lace with a thin collar. The nose is lightly sweet with some candi sugar, floral aromas, spicy Saison yeast, orange peel, and light spices. The flavor is also lightly sweet with candi sugar, orange flower, white peppercorn, and some spicy Saison yeast. The body is medium and somewhat oily with lively carbonation and a long spicy yeast and lightly sweet orange flower water finish.

12oz bottle. Pours a cloudy yellow color with a huge soapy white head. Good lacing. Long lasting foam. Very funky smelling with a lingering floweriness and light bready notes. Taste is hoppy, a bit vinous, with a decise barnyard flavor to it. Medium bodied. Very complex brew.

22 oz bottle. Pours a hazy yellow with fizzy white head. Aroma of citrus, farmhouse, popcorn and butter scotch. Flavor is much the same with a touch of grass, banana and nice funk. Mouthfeel is light body, soft, with fizzy carbonation. Overall, solid brew.

Bottled. Aroma- definite hints from the wine barrel, citrus and yeast. Poured (into a chalice) a nice golden with just a bit of head, nice bubbling. Nice subtle beer. Some sweetness but a tart finish of a granny smith.

A hazy, light yellow pour with a white head. The aroma is peppery with some citrus. The light body has sparkling texture with lively, almost fizzy, carbonation. The taste is tart with a dry finish.

Poured into a chalice. Immediate aromas of citrus and yeast typical of belgians. I thought the taste was good but the aftertaste was off for belgians. It had a bitter/hoppy taste typical of IPAs. Memorable but Iíd say itís not true to the style.

750ml bottle: This one pours a pale, straw yellow color. There was a huge frothy white head on it that didnít linger long, nor did it leave any lacing. Nose is mainly peppery and coriander. Some citrus also. The taste is very good. Somewhat lighter body, but very flavorful. Some wheat notes, coriander and peppery notes, and some citrus, just like the nose. Subtle, yet a bit complex and very tasty. I will definitely have another.

5000 (6599) - Hardened Liver, Washington, USA - JUL 16, 2011
Bottle:   Dirty straw, hint of gold, large rocky white head, falls quickly, spotty lacing.   Pale floral and citrus nose.   A little bit of straw and mealiness.   Smells decent for an American made Saison.   More barnish and musty on the tongue than the nose suggests.   Not all that mealy, not spritzy or bubbley either.   Semi-sweet, a bit grassy on the backside, smidgen of lemon.   Still remains a little musty and barnish.   Body and mouthfeel are actually quite good, not bubbley but its smooth.   This one was pretty flavorful from start to end.   Probably one of the better American examples that I have had.   Thanks Kevin for this one!
