Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

Bottle @ party in LA. Blonde-yellow. Bright floral hop aroma is bony and resinous like mastic. Yum! Nice balance of sweet-tart. Dry and nuanced. Great carbonation level. Just when it could be too sweet, the hops rescue. Finishes with a candi kiss, after a journey of hoppy dryness. Quite a refined brew!

Bottle from 10/23/2009 Bottle opens with a nice crack and then a volcano of foam that almost made it into the sink. When it all settles down it pours a mostly clear golden straw color with a pillowy white head that sticks around forever. Smells sweet and fruity with lemons andgreen apples dominating the aroma. There’s some funk in there that reminds me a bit of spoiled meat? Luckily its not to strong but its there. Taste is a bit sweet, green apples and honey mixed with a bit of funk. Spirited level of carbonation, medium body, sweet almost sticky mouthfeel. Despite the misstep upon opening, this beer isn’t half bad.

Hazy pale golden pour with a huge foamy white head. Aroma of soft phenolics, orange, with a whiff of sourness. Mild sour flavor with hints of apples. Crisp tingly tart bitter finish. Light bodied, not quite as carbonated as I would prefer. Nice delicate sour beer. Very refreshing.

12 oz bottle, 2011. Pours cloudy gold with white head. The aroma is lemon, some fruity esters, coriander, some phenolic spiciness, mild sweet honey note, a hint of sourdough. The flavor is nice smooth maltiness with some cracker and lemon cookie notes. There is a pleasant subdued Dupont-esque spiciness with white pepper, coriander, hay, very slight dank cellar note. There’s just a touch of acidity to the finish, which is itself nice and dry. Lovely brew.

22oz bottle from Pick’s poured into a snifter. Bottled on 2/19/10. Been aging this one for a little bit. The cap popped off like a bottle of champagne. My glass is half full of just foam and it takes about 3 minutes to go down. Pours a cloudy gold with about (as of now) 4 fingers of frothy bright white head. Sweet yeast aroma with a nice scent of citrus. Slight aroma of clove also. Taste is lightly sweet and lightly sour. Taste of grapefruit and citrus. Medium bodied with a thick yet sticky texture. Lively carbonation and a long sweet finish. Overall, very good. I wish I could get more of this stuff.

bottle in a pint glass -pours cloudy yellow with thin white head and minimal lacing. Nose is pepper and orange/citrus. Aroma is lemon peel or some other peel and that Miller High Life smokiness. Taste is sweet and tart. Finish is medium-length. Aftertaste is stale. This is another bottle that was mislabeled - this should not say, "Belgian style ale" - but, "saison’ or at least humor me with something more vague like, "beer style beer." Too tart and disappointing.

Bottled. A very light yellow coloured beer with a good white head. Fubky in the mouth bit tart rather than sour. In fact it’sa bit too tart. good fubky lemony peppery hoppy nose. A bit too brash in the mouth with the lemon being too tart. Not my knid of saison.

Had this in a bottle poured into a pint glass. Foamy head in the glass. Very sweet flavor. Golden pale color. Smell is sweet grain. Full bodied. There is a slight hint of barley at the end. This was pretty good and fairly interesting for the style.

(bomber, 2009 vintage, sampled 7/12/10). Clear golden color. Large white head. Moderate citrus aroma. Moderate sweet honey/sugar flavor, with light pepper. Avg duration. Light alcohol finish. Thin/slick texture. Moderate to high carbonation. Fair lacing.
