COMMERCIAL DESCRIPTION
Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

22 oz. bottle. Bottled on 02/19/10. Pours a light, fluffy, lasting white head, of long duration, over a slightly hazy yellow (SRM 3) body.....nose is apple/pear, light citrus, bit of coriander.....taste is light sweet malt to start, then clove, lemon, finishing with a light pepper bite and light bitterness.....mouth feel is medium, carbonation adds a pleasant spritz. This is true to its style. It is light, refreshing, and has all of the spice and fruit flavors it should. BJCP 7/3/15/5/7

Shared with a friend on a warm evening. Nice appearance in the glass. Poured hard to get a nice 2 inch frothy head. The aromas where sweet, peppery and some citrus. Flavors the same, including more pepper and orange. A nice Saison. Very drinkable and enjoyable.

UPDATED: NOV 5, 2011 2010 bomber on 11/5/11. the Brett has developed well over ~2 years in the bottle. huge 4 finger rocky white head over an orange pour. big Brett nose with layers of oak, spices and orange peel. medium body with funky Brett, orange peel, lemon, oak and grapes. dry Brett finish with more orange peel and spice.

shared bomber on 6/6/10. hazy yellow pour with a 1 finger white head. orange / lemon nose with Belgian yeast and a touch of oak. Medium body with a slight tartness, orange peel and a general softness. tart finish with light fruit notes, more oak and orange. Curious to see how my 2nd bottle does over time in the cellar.

golden with huge white head. fruity esters to nose. high carbonation. some bitterness before fruity esters, tart notes, with some oak. remarkable complexity to this brew. bone dry finish. i can’t think of a better saison that i have had, stellar

(22 oz bottle). Pours hazy straw yellow with small carbonation bubble and white head. Aroma of lemon, coriander. Taste is sweet with a slight bitterness. Orange and vanilla are present; this is a surprisingly rich beer with good depth. Finish is more vanilla and chewy. My expectations were very much surpassed. Excellent!

Drank this last night so I can’t quite recall all the details, but it was crisp, refreshing, and delicious. Heavy spice notes and just a bit sour. Awesome.

From the bottle, pours a clear pale yellow-orange with a thick bubbly white head. Smells like a Belgian--wild yeast, cloves, sweet malt. Taste is very good, a hint of sourness at the end, but otherwise smooth, yeasty, much like the aroma would lend you to expect. Bad rating, my apologies, but it’s a good beer worth trying.

bottle..Hazy light golden pour , big fluffy white head , excellent lacing . Aroma of citrus and spice . The flavor is sweet upfront with notes of orange , pepper and vanilla . Tart and dry finish , very faint wild yeast touch , medium to high carbonation . Very refreshing and well balanced , excellent .

Gosh it’s nice. Barely filtered gold blond look with intricate side lacing. Aroma of earth, mixed green grape and lemon. Taste is same with varied white grape flavors, light mineral. Pretty and elegant Saison that really seems like wine!

22oz bottle poured into a Tulip at 43°. Color is a hazy yellow gold with good carbonation and a white head that is tight in the center and loose on the edge. Aroma of sour yeast and hay. It has a lighter medium body that goes down with an easy crisp feel. Finish comes in sweet with fruity yeast, flowery hops and white pepper. After taste lets a mild sour come out that leaves you with a dry feel. Overall its a very well done and refreshing Saison.
