Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

On tap at the brewpub in Chicago. Hazy pale yellow. Aroma is perfumey lychee, gooseberry, with acetic undertones. Lightly yeasty and tart, with lovely lychee and berry fruit, soft subtle spices. Absolutely fantastic!

650 mL bottle. Hazy yellow-gold with a nice white head. Appealing aroma has dried orange and apple skins, wild yeast, and a little graininess. Theflavour is fairly subtle, with neutral/tart citrus, wheat malt, and a hint of wood. Quite dry, but no metallic notes. Highly carbonated. A well constructed beer, but one which doesn’t greatly appeal to me.

Bottle from South Bay Drugs: Poured as a glowing yellow hue with a tint of white and a minimum amount of haze sediment floating about. Tiny formation of head while the aroma holds a zesty dosage of spiced yeast in a typical Belgian fashion. The flavor is close to the aroma with a strong serving of zesty yeast with dashes of spice such as clove and coriander and a noticeable orange peel that taste more authentic then some other saisons being made in the USA. This reminded me to appreciate the saison style because lately I had tasted some boring ones that made me want to steer away from them.

Brewed in the USA !!! Courtesy of AFI96..Thanks Waylo. Pours a hazy yellow color with a very small white head. Aroma of sour white grapes, lemon peels and some barnyard funk. Taste is also kind of funky with some mild spices, wheat, yeast and cloves. Mouthfeel has a slight bite on the tongue when you first sip this saison yet it doesn’t finish in the same manner.

22oz bottle, dated 1/29/10, courtesy of daknole. thanks, dak! pours a beautiful, pale yellow-gold with a thick, bubbly, bright white head leaving a tight ring of lace. aroma is fantastic with sweet fruit notes of pear, green apple, kiwi, and tangerine backed by floral white wine, oak, and belgian yeast with a perfect blend of white pepper, coriander, and clove and just a touch of lemon grass and funky, wild brett. flavor is delicious as well with the smooth notes of oak, vanilla, and white wine coming to the forefront ahead of the fruit notes of orange peel, berry, and apricot with a blend of cinnamon, clove, and sage adding a unique spice element just before the slightly tart, dry, funky finish. palate is medium bodied with dense carbonation making it almost creamy on the palate with a dry, herbal finish. overall, an absolutely wonderful saison and definitely a pleasant surprise.

Bottle. Clear pale gold with a thin head. Aroma of corianger, nectarine, and musk. Spicy and complex flavor with fruit, nectarine and peach, and lots of spice. Very drinkable. Smooth, full bodied.

Pours a fizzy, white head that laces with a body that is golden and clear (top pour). Aromas of green apples, citrus, and yeast. Flavor is yeast, green apple, some clove and banana notes, spicy. Finish is dry and clean. Drinkable body.

Appearance: Pours a pastel yellow with a thin white film.

Aroma: Orange zest, spicy yeast, pronounced barrel notes and a little bit of sugar.

Taste: Orange peel, lemon, spicy yeast, barrel, candi sugar and a spicy kiss of hops.

Mouthfeel: Full bodied with prickly carbonation.

Overall: I found this beer to be just awesome. Super balanced, bold and tasty. Very inviting.

Bottled. Golden colour, small white head. Aroma is fruits, some earth, mild spices and dishwater. Flavour is rather much the same. Quite thin and not all that exciting.

UPDATED: DEC 18, 2010 Bottle. A - Nice crisp, golden color with a fairly large, foamy, light fluffy, pearly white head. Great retention that finally settles into a nice foamy layer of lace. S - Wonderful juicy golden fruit is strongest with lots of pear, apple, golden raisin, lemon and some other citrus. Grassy (especially lemon grass) along with hay. Some barnyard saison and wild yeast and funky aroma. Touch of a white wine and spice. Very complex and enjoyable. T - Taste is also very complex. Plenty of fruitiness that mirrors the nose. Mid-sip, it definitely has a white wine type of flavor, although it isn’t particularly vinous. A nice woody flavor with a good dose of vanilla also comes out to support that wine flavor. Has an underlying funk that is a great compliment to the other flavors and doesn’t overtake them. There is always a strong underlying orange/lemon rind and lemon grass citrusy flavor, but toward the finish it comes out particularly strong along with a nice spiciness featuring white pepper, clove, coriander, and a hint of cumin amongst other spices. M - Medium body with a bit above average carbonation. A zesty, active feel with a drying finish. Very champagne/sparkling wine like feel that accompanies the white wine taste well. D - Complex but balanced beer that is a delight to sip. Nothing overpowers the other flavors, and the body is great. A little strong for the palate to want another right away, especially compared to some other saisons I’ve had, but I had no trouble finishing the bottle. Notes: Very nice and enjoyable beer. Complex and balanced drink that had some nice funky/barnyard aspects of a saison, but it had some other flavor aspects that were similar to a Chardonnay, a biere de garde, and some BSPA aspects as well. It definitely had a nice Belgian flavor though. Funk, fruitiness, grassiness, grape, and sweetness all present. And that woody/vanilla flavor just steps it up more. Definitely worth a try and is a great beer.
