Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

From a 65cl bottle. Pours a yellow color with a small white head. Drank half one day and the rest a couple of days later and amazingly the taste, smell, and even carbonation was the same. Very sharp and crisp. Flavor is spicy, coriander, lemon, with just a touch of fruit sweetness.

Bottle. Hazy pour with some white head. Citrus and spice aroma with a touch of leather. Fruit, spice and funk flavor are smoother possibly due to barreling. Belgian like notes are memorable.

Hazy gold with several inches of brilliant white souffle head. Aroma is spicy with peary esters. Taste is light, dry and bretty, with mild sweetness and pear and citrus into the finish. Vigorously carbonated. $4/12oz

A nice saison that pours the typical color of the style and creates a huge, foamy, white head. The nose suggests a sourness that is never fully realized, as the taste only presents a very subtle sour twang. Otherwise, there’s a bit orange peel, subtle cloves, and just a bit of hops. Very nice beer.

12 oz bottle. 2010 vintage. Pours a cloudy yellow with a large amount of soapy white head with good retention. Aroma has some coriander, yeast, lemon, orange, and some hops. There is definitely some funkiness to the aroma. Flavor has some sweetness to it mixed with a hint of lemon and orange peel. There is some definitely some spiciness with the coriander in the flavor. The finish is really interesting. It is indeed creamy and dry. The creaminess is really unexpected from the first taste, which makes this a fun drink. The back of the palate, is really funky, but not necessarily in a bad way. It’s pretty much a transition from spice to pure funk. The beer is medium bodied with marginal carbonation. The first sip of this beer was really jolting, but the more I drank, the more I liked the finish and the more I admired its complexity. I will definitely seek these out again when I see them.

pours a thick white head, fruit like aroma i associate with belgian ales, but very strong at first, then mellows down to a light citrus aroma, slightly cloudy blonde appearance, fruit like flavor, very sweet, a good beer overall

Enjoyed from a 16.9oz bottle in an English pint glass. The beer pours a fairly clear yellow color, with a large white head. The nose shows notes of citrus, peppery spices, and a slight farmhouse funk, more brettanomyces than other souring agents. The palate is lightly tart, citrusy, spicy, and highly effervescent. The latter adds further dryness to what is already a bone dry finish, and cleanses the palate. The finish is nicely crisp, allowing the beer to be highly quaffable. Overall, absolutely excellent.

Bottle. Poured into a chalice a slightly hazy straw yellow color with a nice fluffy white head. Nice lace as the head settles. The aroma is that of straw, lemon, grass, orange, and very mild barnyard. The mouthfeel is light and refreshing. The citrus really come out in the flavor and are nice followed with some mild bitterness. Some floral type flavors as well. Nice wine like notes as well. A very solid, slightly wild beer that is pleasant to drink.
