Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

Appearance: Pours a pastel yellow with a thin white film.

Aroma: Orange zest, spicy yeast, pronounced barrel notes and a little bit of sugar.

Taste: Orange peel, lemon, spicy yeast, barrel, candi sugar and a spicy kiss of hops.

Mouthfeel: Full bodied with prickly carbonation.

Overall: I found this beer to be just awesome. Super balanced, bold and tasty. Very inviting.

Bottled. Golden colour, small white head. Aroma is fruits, some earth, mild spices and dishwater. Flavour is rather much the same. Quite thin and not all that exciting.

UPDATED: DEC 18, 2010 Bottle. A - Nice crisp, golden color with a fairly large, foamy, light fluffy, pearly white head. Great retention that finally settles into a nice foamy layer of lace. S - Wonderful juicy golden fruit is strongest with lots of pear, apple, golden raisin, lemon and some other citrus. Grassy (especially lemon grass) along with hay. Some barnyard saison and wild yeast and funky aroma. Touch of a white wine and spice. Very complex and enjoyable. T - Taste is also very complex. Plenty of fruitiness that mirrors the nose. Mid-sip, it definitely has a white wine type of flavor, although it isnít particularly vinous. A nice woody flavor with a good dose of vanilla also comes out to support that wine flavor. Has an underlying funk that is a great compliment to the other flavors and doesnít overtake them. There is always a strong underlying orange/lemon rind and lemon grass citrusy flavor, but toward the finish it comes out particularly strong along with a nice spiciness featuring white pepper, clove, coriander, and a hint of cumin amongst other spices. M - Medium body with a bit above average carbonation. A zesty, active feel with a drying finish. Very champagne/sparkling wine like feel that accompanies the white wine taste well. D - Complex but balanced beer that is a delight to sip. Nothing overpowers the other flavors, and the body is great. A little strong for the palate to want another right away, especially compared to some other saisons Iíve had, but I had no trouble finishing the bottle. Notes: Very nice and enjoyable beer. Complex and balanced drink that had some nice funky/barnyard aspects of a saison, but it had some other flavor aspects that were similar to a Chardonnay, a biere de garde, and some BSPA aspects as well. It definitely had a nice Belgian flavor though. Funk, fruitiness, grassiness, grape, and sweetness all present. And that woody/vanilla flavor just steps it up more. Definitely worth a try and is a great beer.

Poured on tap at Dexters in Madison, WI, pours a clear golden color with a thin white head and slight lacing, the aroma is fruity with a hint of booze in the nose, the flavor is nicely balanced with malt and fruit, it even has a touch of sourness in the finish, pretty enjoyable.

22 ounce bottle(2010 edition) pours an effervescent, hazy, yellow gold body with a large and delicate white head. Good retention and some sheet lacing. Aroma is funky and yeasty, with fruity honeydew melon, white grape skins, kiwi, orange peel, lemon, and some herbal hops. Dry and silky on the palate with a champagne like carbonation. Taste nirrors aroma. Funky wild yeast character is apparent but could use more time to develop. Subtle barnyard, kiwi, white grape skins, orange peel, and lemon, with some dry bitterness from herbal hops. Would love to have a few bottles to age to see if some time gives it some more pastoral character. Very nicely done.

Bottled 02/19/2010. Purchased from some dive store in San Diego Mission Bay. Colour: White-yellow with cloud. Nose: Young berries, lively yeast, dopple of perfume, glue. Taste: Mmmm...berries again, but more ripe...and red grapes perhaps? Medium bitter middle with grapefruit. Late surge oak mixed with yeast. Pretty solid stuff.

2010 bottle: poured a light golden color with a big fluffy white head that retained a half inch. Lots of floating spice and sediment in the glass. aroma has light spice, orange peel, and a nice bright citrus. Smells much like a Belgian Wit beer. Mouth feel is light and crisp with high side carbonation. Taste has banana yeast, citrus and pepper spice with maybe vanilla? Would I buy again? Yes, Iím geting two more bottles to put in the cellar.

Pours a golden yellow, with a thick, forthy white head. Aroma is very fruity, especially banana and oranges. Very fuity taste to this one, which had some ctirus and hoppy feel to it. Very nice feel to the mouth, has a nice bitter finish to it.

[bottle] Pineapple and sour banana aroma with some honey and a woody character. Hazy yellow under a thick, white ring that laced the glass. Tropical fruit flaovur with a woody bitterness and a touch of horseblanket and white grape. The woody bitterness transcends the whole tasting experience and is a nice counterpoint to the horseblanket. Light body, medium carbonation, woody bitter finish.
