Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

22oz bottle $7. I bought this after reading the description, the label was nice also. It was a nice orange color in the glass and smelled a little floral and kind of odd. The taste was nice like a saison but with a definite orange flavor to it, the peels really shined in this beer. This was so damn easy to drink, nice beer. hazy bright gold body with a tall white head. nose is heavily floral with the white grape/wine and wood character either present in small amounts or easy to pick up when suggested. malt is biscuity, slightly toasted (perhaps barrel character?) and semi-sweet; yeast is floral soap and dried herbs. hops are light citrus and a little bit sour/moldy. moderately thick body for the style. fortunately drier than matilda but still too chewy and syrupy. herbal green finish. will drink occasionally but I think the syrupiness and malt chewiness could be dialled down. dry this out some more and we’re talking about something good.

2010. 22oz in Goose Island stem at Toad in the Hole. Very pale, cloudy with thin diminishing head. Initial aroma is dirty diaper; mellows into more pleasant aromas of sweet corn and cantaloupe esters. Flavors are subtly fruity with hints of dried apple, pineapple, and stonefruit. The palate is the kicker -- it’s only carbonated to a medium-high level, but the mouthfeel kicks off with an exciting, prickly pepper sensation, This example registers pretty young, with characteristics desirable in a witbier; I’d imagine it would age into a more elegant experience within a few months.

Bottle. Nice pale yellow pour with fluffy white head. Aroma is quite winey, slighty tart and citrusy, bretty and wild, quite complex. Taste is a bit tart, a bit bitter, completely awesome. Notes of citrus, wheat, and a bit of sweetness. Palate is smooth and silky, very enjoyable. This is it, best saison I’ve ever had.

UPDATED: NOV 12, 2012 Bottle (2012 vintage). Head is initially small, fizzy/frothy, white, mostly diminishing. Body is hazy medium yellow, bottle conditioned. Aroma is lightly malty (toasted grain), lightly hoppy (herbs, flowers), lightly yeasty (basement, cement), with notes of gum/banana, lemon candy, and pepper. Flavor is moderately to heavily sweet, lightly acidic, lightly bitter. Finish is lightly to moderately sweet, lightly acidic, lightly to moderately bitter. Medium body, watery/syrupy texture, lively carbonation, lightly alcoholic. Another try with this year’s edition, and still not a fan. It’s flabby and sugary sweet. This is kinda like lemon-banana soda pop.

bottle-neon yellow hue with a fizzy humpy white head. lots of spitzy carbonation going on in my glass. nose of spice, lite vineous note, oak and grapes. very nice! Wow! lots of woody green grape notes, spice and a touch of oak and lite yeast funk. really nice woody flavors to start followed by estery/fruity notes long into the finish. very tart here, but not like a jolly pumpkin. the finish went for a while, then all of a sudden stopped. still nonetheless, a very tasty saison here but i wish it was unfiltered.

Aroma : Lots of herbs with coriander and orange peel. some wheat. Spicy and fresh

Overall : Nice hints of honey. Very fresh. Nice beer.

Yellow body with a white head.Aroma of melon,orange zest,and white wine.Flavor gies me much of the same.The finish is very dry.
