Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

Poors a golden hue with a medium sized head. Very carbonated up front like champagne. A tart flavor is noted that is not overpowering. Clean finish.

On tap at Anchor Bar in Wichita. Pours hazy yellow-gold with small white head. Aromas of orange, a bit of tartness, yeast, and a bit of the barrel. Flavors of light spices, orange, lemon, yeast, bit of tartness, a bit of vanilla, and some wet wood. Very tasty brew and a hell of an american saison. Very proud that this brew came out of Chicago.

Big bottle pour is effervescent, releasing lots of fluffy white head. Body is a nice golden yellow. Aroma is citrus and yeast, very natural. Mouthfeel is crisp, perfect carbonation level. Flavor is very citrus intensive with some tartness and light finishing bitterness. As I sit and drink this beer it seems to be getting better and better. That, to me, is the mark of a quality brew.

12oz 2010 btl. Great color on this a nice crisp golden slightly hazy with a foamy white head. Refreshing citris aroma. Nice fresh bottle a bit spicy, a bit hoppy, and a bit citric. Awesome balance. Looks great tastes great.

2010 bottle poured a light golden color with a big fluffy white head that retained a half inch. aroma has earthy yeast, light spice, wet orange peel, and a nice bright citrus. mouth feel is light and crisp with high side carbonation. flavor has banana yeast, green apple, light citrus, mellow spice, orange, and a mild barrel wood thing. nice and crisp and has a lot of saison character but there is a slight funky dry twist thrown in.

Blond and effervescent with a fluffy white head. Nice white pepper spicy zip to the nose. Fairly clean yeastiness, with piquant white pepper and a delicate ripple of orange and a small wave a pinot grigio. Refreshing, piquant, balanced, crisp, and altogether enjoyable.

On draft @ ChurchKey in DC. Hazy golden pour, small white head. Aroma was an array of some citrus, sour fruitiness, and maybe a touch of wood. Nothing overpowering. Flavors were somewhat traditional saison flavors. Some sourness, big fruitiness, very crisp and refreshing. Smooth finish with a light bitterness, somewhat vinous and a bit of heat. Easily one of my favorite saisons that I have tried.

2009 Bottle: Pours a bright straw color with a light haze and a finger of bubbly white head. Fruity aroma is green apples, yeast, vinous fruits, and something that reminds me of raspberry jam. In the flavor I can really pick up the orange peel and hints of pepper, along with the yeast. It has a dry, vinous note that blends well with the pepper and keeps it from being too fruity. Crisp. Enjoyable.

I’d look at this as part Saison, part sour in character. The wine and orange peel give it a good bit of sour feel. Nose and body are that of a Saison though. Looks of like bitter/soul flavor. Very carbonated, maybe a little too much, but that’s normal for this kind of beer. Definitely worth a shot, and has a unique flavor.
