COMMERCIAL DESCRIPTION
Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

Bomber shared by iowaherkeye. Nose of yeast, wheat, and a hint of wine. Clear yellow with a small white head. Flavor is lightly sweet, with hints of bitterness and citrus and yeast.

Belgian Saison I’ve only had one other, Clear yellow with a big beige head and vigorous carbonation. Crisp spicy and herbal aroma. Flavor is very dry and herbal, with a lot of dry winy and spicy notes. Crisp finish. I could have drank an awful lot of this. but I just got a sample from a Distributor show.

22oz bottle from Big Z Beverage. Pours a slightly hazy but otherwise transparent straw gold with a tight, slightly creamy white head. Aroma is heavy on the orange and orange peel, light lemon, lightly malty, a little coriander, a little light pepper. Flavor is sweet with plenty of candy sugar right on the front, white pepper, oranges, lemon peel, light spice. Finish is medium bodied and dry. Wild yeast? I don’t get any of it. Wine barrel? Where’s the wood? I guess perhaps there’s a little buttery flavor/texture like a Chardonnay, but I’m missing the uniqueness of this.

22oz bottle, bottled 02/19/10 from Holiday Wine Cellar, $7 or 8. Minimally hazy effervescent bright golden yellow with a one finger white head, creamy with good retention. Big yeasty aroma, lemony with plenty of white peppery notes. Definite orange peels as well as light dusty pale malts. Flavor has a little more citrus notes leaning more towards the orange. Some herbal hops are also present. I get a tinge of vanilla somewhere towards the finish, which was semi-dry with bitterness peaking at a 3. Just a tinge of white wine, along with a little burn noted at the end. Moderately high carbonation with a medium body. Very good example, and quite tasty.

Apparence: La couleur est blonde légèrement voilée avce une très faible densité de bulle. Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Goût d’agrumes avec une pointe de banane et d’épices. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement minérale. Moyenne effervescence en bouche. Bottle from SL. Pour was golden to slight yellow. Nice initial head, white color for the most part, good lacing. The aroma was fruity esters, yeast, wheat, Belgian Strong Golden-like. Flavors followed, bananas, vanilla in particular, bready yeast, somewhat tripel like, yet hops light. Didn’t get much saison/farmhouse/spice out of this, perhaps the yeast the only thing contributing there? Citrus finish, oranges... mouthfeel is smooth balanced carbonation, a touch sweet.

Bottle; poured a clear gold color with a smallish white head. Aroma of yeast, orange, citrus, wine, vanilla and a dash of spice. Flavor was solid with some nice complexity. Yeast and wheat up front, which transitions to orange and citrus. In the finish you get some spice and vanilla. Pretty easy to drink and could have some mass appeal.

Bomber, 2010 vintage, poured into a tulip glass. Pours a pale gold color with a thin fading white head. Aroma has some light esters evoking fruit salad, including apple, pear, and banana. Some clove notes lead me to believe this is made with some wheat. Nice smooth spiciness, also getting some vanilla. Flavor is bright and slightly tart, some lemon now emerging with the banana pith. Distinct but very well-integrated pepper note, along with mild notes of cooking herbs. Fruity tropical hops blend well with the esters, just like in the better Belgian IPAs. Light honeyed malts provide a soft background for all the yeasty and hoppy complexity. Dry finish, but not in an astringent way, which is a very significant accomplishment for a beer partially aged in wine barrels. Crisp and clean, a little hefty to be considered refreshing. A nice satisfying beer, somewhere between tripel, saison, and Belgian IPA.

22oz bottle Jan ’09 4/17/10 (Binny’s Naperville)-58° in Snifter-Pours a hazy yellowish golden with a big white head. Aroma of yeast, brett, and pepper. Taste of the same with a bit of a tartness along with some orange taste. This medium bodied brew is very well balanced and quite tasty. Nice job.
