Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

UPDATED: DEC 9, 2013 [Bottle, 2013] Murky sunshine yellow body with a soapy, bone white head that lasts as a nice chunky collar & swampy film. Aroma is bursting with fruit; lemon flesh, orange, peach, mild apricot, white grape, all backed my solid helping of farmhouse funkiness. Wet hay, cotton, slight sweaty & cheesy funk. Somewhat floral, faintly spicy & grassy hop character. Complex aroma. Taste includes much funk & fruit as well. Lemon peel, peach tones, musty hay, orange zest, hints of barnyard sweat funk, crisp melon, fresh grassy tone, slightly vinous white grapes & a strong bready, yeast filled finish. Lots of yeast. Chunky yeast body with a highly carbonated, crispy & dry finish. A great example of the style.

[Tap, 2013] Iíve found that Sofie actually loses a bit of itís spunk on tap. Not sure if itís the fact that it doesnít receive full "bottle conditioning" (keg conditioning?) but itís not quite as freshly funkified & thus loses a bit of itís aforementioned brightness on tap as compared to cracking open a bottle. Less carbonated & lively as well. Still a good beer on tap, but fantastic in the bottle. My score will still represent the bottled versions.

Rating #1326 -15.11.2014 - Bottle from Labatt guy. 6.5% Pours a hazy straw colour with a frothy white head, not much lacing. Aroma is of farmhouse yeast. Clean mouthfeel, medium carbonation, medium alcohol warmth. Taste is a crisp sweetness, tempered with herbal notes, mild sourness from the yeast. Pretty pleasant saison.

Bottle at home. Pours pale straw, very slight haze. Copious, fast-receding white head. Grapefruit and green apple on the nose. Very slight hint of something funky, but not unpleasant. Flavor is sharp, more apple, some citrus. Slight sweetness develops throughout, resolving with a tart, crisp finish. Thin mouthfeel, high carbonation. Refreshing, very pleasing and drinkable.

Bottle from Dranken Geers, Oostakker, Nr Gent, Belgie, consumed at Isobels, Eardisley, Herefordshire, Saturday 31st October 2015. Looks lovely and spritzy on the pour, lovely clean, zippy bubbles. Aroma fresh but also Belgian, clean, a touch of spice and orange peel. This is fresh in the mouth also, a seriously confident, classy beer. I like it but a big bottle on my own after a few beers was hard going. A7 A4 T8 P4 Ov15 3.8

A soft, spicy dough, accented with light oranges and with a gentle nudge of wine grapes. The light honey brew cascades into the glass and a soapy white head rises to two fingers above the surface.The aroma is mirrored in the flavor and the carbonation is as delicate as the rest of the experience. Refined and elegant and even the finish screams class. Very nice. Iíll be happy to open another when the need for a subtle nightcap.

4 oz pour on draft at ChurchKey. Clear golden yellow with off-white head. Aromas of herbs, citrus, light spice, light vinegar. Tastes of light oak, citrus, floral, grassy notes, citrus peel. Medium-light body with a dry finish.

Bottle. Hazy, golden color with a medium head. Aroma is slightly fruity with a slightly funk smell. Taste is like a fruity champagne with a tast finish.
