COMMERCIAL DESCRIPTION
Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

Sampled on draught at the Hopsmith Tavern, Chicago. Pale yellow with a white head. Very fruity flavour with lots of orange taste a green apple tartness. Hints of peach and champagne.Dry finish. Very easy drinking with an appealing sweetness offset by a fruity tartness. This is a highly drinkable Saison.

Aroma is Sauvignon blanc, Brett, wheat, corn. Appearance is pale yellow, initial pour is crystal clear. Very active bubbles. Taste: white pepper, wheat, hay, champagne, barnyard funk. Palate is thin bodied and quite effervescent. Finishes slightly dry. Overall an enjoyable farmhouse saison that isn’t exorbitantly expensive.

UPDATED: SEP 18, 2016 12oz bottle. Pours pale yellow with a large foamy white head. Aroma is floral, yeasty, and full of pear. Taste is lightly tart with lemon, orange, pear, and some grapefruit. Some pepper. Pleasant traces of yeast. Dry, white wine like finish. Light body. Somewhat above average carbonation.

Veiled golden color with extra powerful champagne like amount of activity. Extra frothy beige 4 finger sparkly island head, lasting around 15-20 minutes, with strong legs. Aromas of white wine and champagne, yeast and fresh flowers. Flavors of apple, green grapes, pears, floral and herbal spices. Perfect balance of sweetness and sharpness. Oily light body with champagne like carbonation. Light and short finish, ending with a vinous cider like green grapes fruity feel. Overall exquisitely well crafted : delicious subtle but complex flavors, super fresh and tender, perfect sexy body, great balance and well intensifed, ideal accessible light appertizer.

Doughy yeast in the nose and a touch of saline and citrus notes. Pours slightly cloudy, pale yellow, with quick white foam. Saline / tart notes in the taste, ester yeasts, and some orange citrus. The citrus persists to the end. Mild spice notes, some pepper and coriander. Medium body and light fizz. A touch of hoppy bitterness and a good, dry finish.

Many samples over the last several years, mostly in bottles but most recently on draught at Café Hollander in Madison, WI (early July 2016). Big lasting head tops an oily, lightly cloudy amber body...fairly sharp grapefruit-lemon and peppery nose, some fragrant light malts in there too as it warms, a hint of dry farmy yeast...peppery-spicy throughout on the tongue, lightly sweet in the middle of the palate, just a touch syrupy at first but drying out quite a bit towards the finish, which is tart and cidery...moderate to slightly strong carbonation, fairly full. This was better than recent small bottles I’ve had; the first (750ml) bottles I consumed in, oh, 2010/11 or so were better still I think, a bit more funky and full and dry. Still pretty solid on draught I think, but at this point I probably prefer Matilda.
