COMMERCIAL DESCRIPTION
Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

Poured from a 12 OZ bottle into a tulip glass. Aroma- Has a great "beer" aroma of yeast and spice Appearance- This is a light golden color with some haziness visible. Pours a thick white head; Taste- Incredible, citrus yeast and spice, a fantastic experience Palate- A light to medium bodied beer with moderate carbonation, A dry finish Overall- One of the best beers I have ever had

765 mL Bottle. Murky straw body with a very frothy white head settling to a film leaving some cloudy lace. Intense yeasty aroma with floral - fruity notes, and fields of clover buddy up alongsides. Wow! And Flavah!!! Peach and pear with a sharpness of unripe green grapes subtly squelched by a butterscotch innuendo invade the taste buds, trailing off to a cream cheese finish. Heavenly!

Served from large bottle. Tight lace, with light yellow hue. Flavors of wine, cereal, and hops. Acidic and sweet a little too sweet. Best Saison ale I have tasted.

765ml bottle, Sept 3, 2014 bottle date. Hazy yellowy-straw body with a thick foamy white head over-top with some visible effervescence and sediment as well. Wild yeast presents itself on the the nose, that funky barnyard type. However that is underneath some tart green apple skin, wheat, coriander, pear, white pepper, white flowers, some other flower-based aromas I can’t quite pick out are present. Not quite as carbonated as other champagne-style beers (see: deus brut des flanders), but it is quite carbonated nonetheless. Not getting too much vanilla on the finish, more of a super subtle butterscotch/ green grape finish with medium bitterness. Body is a little thin, quite sessionable for the style and easily could be put in a bucket of ice and enjoyed throughout a meal.

Delicious, yeasty, dry, crisp, sparkly. Thick white head that dissipates with abundant lace. Refreshing with a good alcohol content. Cloudy golden appearance. Much carbonation. Just like the description: "A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish".

This may not be the farmhouse ale that you want or expect. You see, Sofie opts for fruity and refreshing rather than yeasty and earthy. That takes some getting used to. What doesn’t take getting used to is the attractive golden appearance, the pure white head, and the phenomenal citrus aroma. That citrus influence plays a huge part in shaping the flavor, as well. Those lemon/orange notes are tart, sweet, and even a bit sour in the finish. An unconventional farmhouse that’s uncommonly refreshing and approachable.

Great lacing on the glass. Fine fruity aroma. Fantastic velvety mouth-feel that goes down smoothly. Complex tastes between spices and fruits.

Poured at Republic at Seven Corners in a tulip-like glass. Refreshing top notch take on a Belgian saison. Beautiful golden color with little to no head. Hits you with understated hops and an effervescent finish. One of the best around leaving you longing for a trip to Chi-town and Lou Malnatti’s.
