COMMERCIAL DESCRIPTION
Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

THOUGHTS: Very wine like in flavor and very champagne like in texture, but still recognizable as a saison. An excellent summer sipper that could probably stand upt to colder weather as well. It should age incredibly well. Less hoppy than many saisons, but there was enough acid and sourness to create great balance with the malt. TECHNICAL: Bottle. Poured a light to medium yellow that was almost glowing. It had excellent carbonation that constantly tried to rebuild the head, which was average to large, frothy, off-white and mostly diminishing. The aroma had light to moderate light bread and cracker malts; light herbal and grassy hops; moderate to heavy earthy, dusty and spicy yeast; slight funky yeast; and white wine. The initial flavor was slightly sweet, lightly acidic and slightly sour; while the finish was slightly sweet, light to moderately acidic; moderate to heavily tart and lightly bitter with an average on flavor and long on dryness duration. There was white wine, cracker, white bread, funky yeast, a little wood, apple, maybe a hint of vanilla, champagne, earthy yeast and dusty yeast. The light to medium body was very dry with very fizzy and tingly carbonation.

This is definitely one of the best saisons I’ve ever had. I sampled this at the "pub" inside the O’Hare airport. This beer was funky, fruity and delicious! The body was lively and well-carbonated. I tasted some spicy notes from the hops and maybe some pepper, along with some grapefruit, orange and yeast.

Big brown wine bottle, 2013 edition. Pours a very light golden colour, slightly hazy with a big white cap, good retention because of heavy carbonation and some foamy lace. Sour aromas with orange juice notes. The taste has no sourness, but the oranges are still present. Hints of Belgian Ale yeast. Wet mouthfeel with a little stickiness, making this one very refreshing, fruity and almost sessionable. Becomes hazier near the end with lots of particles. This releases spices in the nose. Pretty nice overall and for fans of mimosa, but in a beer.

Tap at haute dish. Gold with white head and good lacing. Beautiful nose of crisp citrus and floral alcohol. Citrus peel, sweet, some pearlike taste. Very clean and crisp and easy to drink. Great beer that drinks much lighter than it is.

Tap at The Oak. Clear gold pour with a small bubbly head. Aromas are pears, citrus, light sour red fruit, light Belgian yeast, and black pepper. Tastes slightly fruity with a big yeast finish. Pears, orange peel, black pepper, very light sourness, light barnyard, and a hint of red wine in the finish. Very dry finish. Interesting saison.

Bottle to snifter. Funky yeast and crushed wheat malt. Moderate low orange. Clear, pale gold with minimal which head that leaves a collar. Taste is orange and sour tartness. Spritzy carbonation.

2014 BOD 8/7/14. Pours a clear light amber (golden, champagne). Massive head volume, world class lacing and retention. Light, but complex, nose of Belgian like yeast, sweet light fruit (pear, grape, apple) and just a hint of spice. Light medium body with a nice smooth texture made a bit prickly from the above normal carbonation level. .Effervescence is evident throughout. The flavor profile is quite nice. Extremely complex, very well balanced but not overly intense, it allows all flavors of the nose to emerge. It begins with the fruit, then develops a white wine like note in the middle coupled with a bit of dryness. The finish is where the farmhouse character emerges with an ever so slight peppery funk that fades into a mild tart dryness. Outstanding and an excellent entry choice for the Saison style.

Bottle from Fujioka's. A bit of sourness up front followed by a subtle bitterness. Nose is somewhat peppery with citrus notes. Pretty good overall.

Really good, has a sweet after taste with a bit of a bitter bite. The orange peel must give the bitter taste. Yum!
