COMMERCIAL DESCRIPTION
Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

Bomber, purchased from Binny’s in Downers Grove. Pours a translucent, brilliant orange/yellow, with a decent white head. Nose is that of citrus (someone sitting five feet away from me asked if I was eating oranges!). Mouthfeel is decently thin, with heavy carbonation. Wheat flavors, along with the expected citrus flavors, and the not-as-expected peppery tones. Leaves the mouth happy. One of my favorite GI brews, and at $8 a bomber, a great value!

Bottle to goblet. Bright yellow, lacy head. Aroma is mild yeast, lemon, Orange. Taste has some apple character, touch of the Belgian wild yeast, but ok, lemon late. Feel is smooth and Very bubbly. Nice beer, though I think a slight step down from the Matilda.

Appearance: hazy pale straw with one finger of loose white head, good retention and patchy lacing. (4/5) Aroma: apple and stone fruit, lemon zest, white pepper and clove, light tropical fruit. (8/10) Taste: mild sweet, moderate bitter, mild peppery spice, mild tart. (8/10) Palate: light body, lively to moderate carbonation, off-dry short duration finish. (5/5) A solid saison marred only slightly by a hint of brown apple in the flavour. The head and lacing could stand to be a little prettier, too. Still a very good example of the style, though! (18/20)

Citrus forward, banana, lots of crisp apple and light pepper balance out the Belgian yeast. Really tasty yet delicate beer. An actual champagne of beer.

Draft at NWIPA A: Cloudy gold, thin white head. N: Clove, esters, banana, unripe peach, touch of lemon, white peppercorn, orange peel, white wine grape. T: Tart, sweet, and a little bit spicy. M: Light body, a bit sticky, no alcohol presence, crisp carbonation. O: Very good saison. It sickens me to say it, but one of the best American versions I have had. It’s deep and complex.

Nice foamy head with heavy carbonation and foggy body. Aroma of soft yeast with just a hint of wit funk and citrus. Flavour is a very nice citrus with barnyard yeast. Soft oily finish. A very fine beer, nicest new world saison I’ve tasted in a long time.

Sampled from bottle @ Leuven Innovation Beer Festival. Clear pale yellow color, small white head. Smell and taste lightly malts, hayish, lemongrass, citrussy. Refreshing. Nice one.

An absolute delight and the epitome of the style. Clean, golden yellow color. Coriander, bananas on the nose. Medium bodied. Taste was sweet, estery, a hair spicy at times with a delicate finish/bubblegum notes.

Draught. Hazy golden yellow with small creamy whitish head, vanilla aroma, medium carbonation, slightly sweet taste with Belgian yeast flavor, smooth dry finish. Very good brew.

This is my first rating, and, without a doubt, my favorite beer. (Hence the overall rating of 20.) Sofie has a refreshing, sparkling, semi-sweet taste that is unique and never gets old. I start most evenings with Sofie. Try it, you’ll like it.
