Fermented with wild yeasts and aged in wine barrels with orange peel, Sofie is a tart, dry, sparkling ale. A subtle, spicy white pepper note, a hint of citrus from the orange peel and a creamy vanilla finish make Sofie an intriguing choice for Champagne drinkers and beer drinkers who are fond of Belgian Saisons.

Hazy pale yellow body, moderate sized creamy white head, soapy lacing, Nose shows signs of orange, brett, light grains, gentle spices, and white wine. Flavor profile consists of similar, slightly more juicy notes. Medium to light bodied, effervescent carbonation, light tartness and acidity in the finish, refreshing.

12 oz bottle poured into chalice. Pours a hazy light yellow gold with rapid dissipating white head. Aroma of yeast and citrus. Very smooth with a mild carbonation. Starts very yeasty and then gets slightly tart. Finished quite smooth.

Gold, bright, 2-inches of egg-shell white head that fade moderate-to-quick. Aroma of straw, dried grass, light apricot and lemon grass, considerable blueberry and some raspberry. Bit of dry biscuit. Body is medium, watery-creamy fell, Soft carbonation, little burn. Flavor is a bit tart with sweet hay mixed in there. (Reminds me of a saison I brewed in which I added lactic acid on top of a semi-sweet malt background. This was not a pleasant combination, but featured more intense tartness/sweetness). A bit of blue/raspberry, hint of strawberry, floral, corn flakes, An OK saison (especially compared with my expectations). The body is a bit too flat/watery, needs to be lighter/crisper, and I’m not a fan of the raw lactic touch without the cheesy notes associated with Brett. Could be a bad bottle; I do recall being very impressed with this previously.

This is definitely one of the best saisons I’ve ever had. I sampled this at the "pub" inside the O’Hare airport. This beer was funky, fruity and delicious! The body was lively and well-carbonated. I tasted some spicy notes from the hops and maybe some pepper, along with some grapefruit, orange and yeast.

Big brown wine bottle, 2013 edition. Pours a very light golden colour, slightly hazy with a big white cap, good retention because of heavy carbonation and some foamy lace. Sour aromas with orange juice notes. The taste has no sourness, but the oranges are still present. Hints of Belgian Ale yeast. Wet mouthfeel with a little stickiness, making this one very refreshing, fruity and almost sessionable. Becomes hazier near the end with lots of particles. This releases spices in the nose. Pretty nice overall and for fans of mimosa, but in a beer.

Tap at haute dish. Gold with white head and good lacing. Beautiful nose of crisp citrus and floral alcohol. Citrus peel, sweet, some pearlike taste. Very clean and crisp and easy to drink. Great beer that drinks much lighter than it is.

Tap at The Oak. Clear gold pour with a small bubbly head. Aromas are pears, citrus, light sour red fruit, light Belgian yeast, and black pepper. Tastes slightly fruity with a big yeast finish. Pears, orange peel, black pepper, very light sourness, light barnyard, and a hint of red wine in the finish. Very dry finish. Interesting saison.

Bottle to snifter. Funky yeast and crushed wheat malt. Moderate low orange. Clear, pale gold with minimal which head that leaves a collar. Taste is orange and sour tartness. Spritzy carbonation.
