Inspired by Frank Lloyd Wright’s grandiose vision for a mile-high skyscraper dubbed "The Illinois," we set out to brew an imperial IPA that would be similar in name and ambition. "The Illinois" Imperial IPA is dry-hopped with three of our favorite hops: Cascade, Meridian, and Citra. the result is a harmoniously hoppy ale with a flavor and aroma that is uniquely Goose Island.

Pours a clear caramel color with a medium cream-colored head that quickly dissipates. Aroma is toffee, citrus, and a hint of cat pee. Flavor is initially bitter, but with more candy and malt than expected. Smooth throughout, with a mouth feel that is just a bit on the thin side before a nice, tart finish comes through. Overall just a touch sweeter than expected for a double IPA and that’s not a bad thing in my book. Very drinkable.

Pours a clear orangish-copper, with smallish head. Strong pine floral hop aroma. Flavor is strong, bitter citrus-piney hops, hops, hops. Bitter, bitter finish. Not a lot of balance here, but if you like a strong hop flavor, this is for you.

Dark orange transparent color with small white head and messy lacing. Flavor has huge citrusy, fruity hops, grapefruit, and oddly enough- chocolate chip cookies. Flavor is very bitter, but not overwhelming- just full of flavor and rich. Nicely balanced with great malts, with a dry biscuity finish. Really good overall

Nice citrus head with good malt profile. Well rounded IPA. Pours amber with good head and lacing. Bitter finish. Average carbonation. Some citrus sourness in finish. Tap at Churchkey .

Thanks to Mark for this bottle! Pours orangish with a hint of red and a loose tan head. The smell is a hint of cherry, caramel and citrus. The taste is rich malt, cherry, citrus, ending dry and crisp. Medium body with fine carbonation.

12 ounce bottle from Johns. Pours a deep copper color with a medium white head. A big fruity nose, oranges and candy. The flavor is really big, more like a IIPA in terms of being super sweet, candied oranges, some zest, orange peel, bitterness. Quite good.

10oz on tap at Lackman. Clear red orange color. Good bigger off-white khaki head. Leaves some kind of bubbly lace. Medium to bigger body. Smooth, kind of soft, lighter carbonation. Good, full feel. A very light slickness in the finish. Good bready malt base, light bit of caramel, toast. An enjoyable malt profile. Some spicy hop, pine. Malt shines more than the hop (I’m told this keg is 2 months old), but there is a nice satisfying bitter flavor still. Mild sweet. Solid DIPA. Better than expected. First time I’ve seen that Meridian hop too, that’s interesting.

12 oz bottle poured into a snifter. "Warm" aromas caramel and grapefruit are strong on this one, with some other, assorted tropical and citrus smells, a somewhat vegetable note, and touches of chocolate and burnt toast in the background. There’s also a vodka alcohol hidden in there too (maybe that’s where the "warmth" comes from. The beer pours a hazy orange brown with a slightly off-white head which reduces to a medium-thick ring with a puffy, cirrus cloud layer. There’s very little lace, and it’s mostly runny. This one tastes highly bitter with a mellow, medium / medium-light sweetness to complement. The full body is rounded nicely by a soft, pillowy / creamy carbonation. The texture is a bit on the viscous and chewy side. A sweet citrus and caramel begin the finish, but this turns over to a burnt toast before laying on the grapefruit bitterness and resin in a heavy dose. The aftertaste lingers for a while and is a mild chocolate and toast with a bit of a vodka flavor.

12oz bottle pours with a deep gold body that supports a white head of foam. The aroma offers up juicy smelling citrus as well as spicy onion dankess and a mild mango note. Inviting aroma. The taste begins with sweetened juicy citrus hops as well as onion spicy dankness and flowing into mild levels of mango and tropical fruit. Behind the juiciness and the bitter spicy hops is a modest layer of booziness telling you that this big rich flavor doesn’t come free. This is just a solid rich IIPA with plenty of both balance and heft that allows for a pleasing sipping experience.

Nice, balanced. Hides its ABV well. Slightly sweet malts, which is relatively unique. Not particularly bitter. Good.
