COMMERCIAL DESCRIPTION
Inspired by Frank Lloyd Wright’s grandiose vision for a mile-high skyscraper dubbed "The Illinois," we set out to brew an imperial IPA that would be similar in name and ambition. "The Illinois" Imperial IPA is dry-hopped with three of our favorite hops: Cascade, Meridian, and Citra. the result is a harmoniously hoppy ale with a flavor and aroma that is uniquely Goose Island.

Clear medium amber with a small bag that soon reduces to a thin top coat. Hop dominated aroma followed by a slightly more balanced flavor. Fruity with a mix of soft fruits and not just citrus. Medium body with lively carbonation. Mild bitterness. O. OK

12 ounce bottle into tulip glass, bottled on 3/27/2014. Pours fairly crystal clear orange amber color with a 2 finger dense light khaki head with good retention, that reduces to a nice cap that lingers. Spotty soapy lacing clings around the glass, with a fair amount of streaming carbonation. Aromas of big grapefruit, tangerine, lemon zest, orange peel, pineapple, floral, grass, pine, caramel, bread, and floral/grassy earthiness. Very nice aromas with good complexity of bright citrus/grassy hops and moderate malt balance; with good strength. Taste of big grapefruit, tangerine, lemon zest, orange peel, pineapple, citrus rind, floral, grass, pine, caramel, light bread, and floral/grassy earthiness. Good amount of floral/pine bitterness on the finish; with lingering notes of grapefruit, tangerine, pineapple, lemon zest, orange peel, citrus rind, floral, grass, pine, light caramel, bread, and floral/grassy earthiness on the finish for a while. Very nice complexity and balance of bright citrus/grassy hops and moderate malt sweetness; with a great crisp malt/bitterness balance and zero cloying flavors after the finish. Medium carbonation and body; with a very smooth, crisp, and lightly sticky mouthfeel that is nice. Alcohol is very well hidden with only a slight warming present after the finish. Overall this is a very nice DIPA! All around good complexity and balance of bright citrus/grassy hops and moderate malt balance; and very smooth and crisp to sip on for the ABV. A very enjoyable offering.

Type: Draft Glass: Tulip From: Southpaw Social Club in San Diego, Calif. Price: $4 (w/ Happy Hour, $6 regular) Purchased: June 3, 2014 Consumed: June 3, 2014 Misc.: N/A Poured a dark caramel color with two fingers of khaki white head when I got it. Above average spiderweb lacing along the sides of the glass. Below average retention on the top. Smelled caramel, citrus hops, floral hops, light rye hops, peach, mango and other tropical notes, along with some light spicy hops. Tasted iced tea, rye hops, caramel malts, sugary syrup, citrus hops, mango and other tropical hops. Medium body. Creamy-to-oily texture. Average carbonation. Long, rather smooth finish. A pretty good smooth IPA overall. I’d have this again for sure.

12 oz. bottle from Sam’s Bottle Shop, Durham, NC. Hazy, rusty orange pour with a frothy off-white head. Aroma of tangerine and grapefruit with a generous toffee malt presence. The taste offers bitter, citrusy hops with sweet caramel and toffee malts that keep the taste from becoming grassy or piney. Bitterness does not linger very long. A very good DIPA.

Bottle. Pours an almost clear light copper color with a small foamy head that fades to a ring. Aroma is surprisingly malty but there’s a good amount of hops too. Big caramel malt aroma with a diverse mixture of hops including weed, pineapple, and grapefruit peel. Tastes too sweet and malty. Not very smooth at all. Big malty punch up front which fades to a very bitter finish. Pine, pineapple and grapefruit. Finish is kinda boozy with some noticeable alcohol. Not a big fan. Is this already too old of a bottle?

Pours a clear bright orange/amber with a large full rocky lemon yellow head. Laces big time. Aroma is grapefruit and pine cones. Taste is sweet caramel malt and a big, in-your-face hoppiness that is nevertheless well balanced with the malt. Hoppiness more evident as bitterness rather than citrus and pine, so I imagine the majority went into the boil rather than the dry hopping afterwards. Even though I’m not the hophead I once was, this is quite decent.

Bottle:   Big IIPA for sure, a bit hot and young.   Feels very green, with a somewhat perfume like alcohol profile.   Big and malty, lots of candied citrus peel but its a bit over the top.   Malt driven example, fairly sweet but not sticky.   Noticeable alcohol.   Could be more floral or bright, but its not out of bounds for me.   Still a little young tho.

Bottle about three months old according to the date on the bottle. Pour has an orange color with an off white covering of head. Aroma has resins, sweet malt, and mild citrus. Mouth feel is medium and the carbonation average. Flavor has a large malted side to go with the hops, resins, mild bitterness, sweet throughout, with caramel and some heat into the finish. To me this is really a hoppy barley wine.

Bottle. Pours a clear orange amber with a whisky off-white head. Rich, dank and sweet hop aroma. Nice full flavor with a sweet spicy hop body and dry bitter finish.
