Inspired by Frank Lloyd Wright’s grandiose vision for a mile-high skyscraper dubbed "The Illinois," we set out to brew an imperial IPA that would be similar in name and ambition. "The Illinois" Imperial IPA is dry-hopped with three of our favorite hops: Cascade, Meridian, and Citra. the result is a harmoniously hoppy ale with a flavor and aroma that is uniquely Goose Island.

Draft at Uno. Orange, tangerine on the nose. Bitter hop notes throughout - pine/resin, spruce and misc. citrus in the flavor. Bitter finish. The high ABV is hidden well.

Pours hazy orange-amber with a 1-finger bone-colored head. Aromas of grapefruit and biscuit malt, with a mild note of caramel. Full body with a moderate thickness, and a light astringency at the back. Citrus hops flavor with a note of resin. Some biscuit notes as well.

Transfer from BA review on 3-11-14- Poured from bottle into snifter Appearance – The beer pours a deep amber orange color with one finger of a fizzy white colored head. The head has a decent level of retention, slowly fading to leave a moderate level of lace on the sides of the glass. Smell – The aroma of the beer is heaviest of a grapefruit hop smell mixed with a good amount of sweeter fruit aromas of tangerine, some apple, and a bit of pear. Along with these fruity aromas are some light bready smells as well as a bit of caramel. Other hop aromas are there too, with notes of pine and some light floral aromas making for a very citrusy/fruity, and smooth smelling double IPA. Taste – The taste begins much drier then I was anticipating. It begins with a bready flavor mixed with just a hint of tangerine. Right from the start the hops hit the taste buds with a good dose of grapefruit as well as a moderately strong pine hop taste. As the taste advances the sweeter tangerine fades almost to nothing being replaced by just the tinniest amount of a toffee sweetness. The hop flavors all the while grow stronger with the grapefruit becoming rather potent and being joined by some earthy hop flavors. In the end with the loss of the sweet and the increase in all the hop, one is left with a somewhat snappy and bitter hop taste to linger on the tongue. Mouthfeel – The body of the beer is on the thicker and creamier side with a carbonation level that is on the lower side. Both really accentuate the grapefruit, earth and pine hop flavors rather nicely really allowing them to shine, all while further accentuating the lack of sweet flavors and yet still bolstering the bready base of the beer well. Overall – A rather nice bready and drier hoppy double imperial that yet still maintains a great drinkability. This was a rather enjoyable brew.

[Bottle (355ml)] Pours a deep clear orange-copper with a large lasting frothy off-white head. Aroma of sweet bready malt, fruity and floral hops, tropical fruit and light alcohol. Flavour of tropical fruit and citrus hops along with sweet malt, light alcohol and a short moderate bitter finish. Medium bodied. Not great, but pretty good indeed.

Bottle: Almost fully opaque, dense burnt-orange body with a creamy eggshell head that foams up nicely & lasts substantially long; nice lacing. First whiff is quite sweet, more sweet than I typically like my DIPAs. Florals, mild dankness, sticky caramel, toffee, pineapple, tangerine, honey sweetness... Lots of notable residual sweetness. Flavor has an added, leafy & mildly floral bitterness, a touch of hop leaf & hop oil, but sadly still has a malt backbone that’s too dark & large for its own good. Sweet, sweet caramel, toffee, & toasted malts just evade the palate & steal the show. Faint tropical fruitiness with a tingle of leaves in the finish, but your palate is left coated with sticky malt sugars. Not necessarily a bad beer, but definitely not my style of DIPA, that’s for sure.
