COMMERCIAL DESCRIPTION
Inspired by Frank Lloyd Wright’s grandiose vision for a mile-high skyscraper dubbed "The Illinois," we set out to brew an imperial IPA that would be similar in name and ambition. "The Illinois" Imperial IPA is dry-hopped with three of our favorite hops: Cascade, Meridian, and Citra. the result is a harmoniously hoppy ale with a flavor and aroma that is uniquely Goose Island.

12 oz. bottle from Sam’s Bottle Shop, Durham, NC. Hazy, rusty orange pour with a frothy off-white head. Aroma of tangerine and grapefruit with a generous toffee malt presence. The taste offers bitter, citrusy hops with sweet caramel and toffee malts that keep the taste from becoming grassy or piney. Bitterness does not linger very long. A very good DIPA.

The color is a slightly hazy orange with a medium off-white head, and the aroma blends citrus and floral hops with light malts. The taste is quite bitter, slightly sour, and a touch sweet; the palate fuses a thick texture, bitter finish, medium-full body, and an average carbonation.

pours a hazy peach with a lasting white head and some spotty lacing. Surprisingly malty aroma with notes of vanilla and stone fruit. taste has notes of vanilla, apricot, green apple and a hint of orange. finish is note overly pronounced but present and pleasant. a fine beer.

Drank out at Prosperity this year. Remember being blown away actually. Great DIPA. Flavor packed and resinous through the finish. Doesn’t stick, it’s clean but packs a punch!

Transfer from BA review on 3-11-14- Poured from bottle into snifter Appearance – The beer pours a deep amber orange color with one finger of a fizzy white colored head. The head has a decent level of retention, slowly fading to leave a moderate level of lace on the sides of the glass. Smell – The aroma of the beer is heaviest of a grapefruit hop smell mixed with a good amount of sweeter fruit aromas of tangerine, some apple, and a bit of pear. Along with these fruity aromas are some light bready smells as well as a bit of caramel. Other hop aromas are there too, with notes of pine and some light floral aromas making for a very citrusy/fruity, and smooth smelling double IPA. Taste – The taste begins much drier then I was anticipating. It begins with a bready flavor mixed with just a hint of tangerine. Right from the start the hops hit the taste buds with a good dose of grapefruit as well as a moderately strong pine hop taste. As the taste advances the sweeter tangerine fades almost to nothing being replaced by just the tinniest amount of a toffee sweetness. The hop flavors all the while grow stronger with the grapefruit becoming rather potent and being joined by some earthy hop flavors. In the end with the loss of the sweet and the increase in all the hop, one is left with a somewhat snappy and bitter hop taste to linger on the tongue. Mouthfeel – The body of the beer is on the thicker and creamier side with a carbonation level that is on the lower side. Both really accentuate the grapefruit, earth and pine hop flavors rather nicely really allowing them to shine, all while further accentuating the lack of sweet flavors and yet still bolstering the bready base of the beer well. Overall – A rather nice bready and drier hoppy double imperial that yet still maintains a great drinkability. This was a rather enjoyable brew.

Grassy aromas from a slightly murky tangerine/yellow body with a frothy white head. Dry, spicy, biting bitterness with more grass, orange and citrus pith. Excellent sweet sticky caramel malt balance to this bitterness that both tames and highlights it at the same time. The alcohol is noticeable but not overwhelming. Leaves a spicy bitter flavor behind on the tongue along with a little candy sugar. Excellent DIPA!

The aroma is more like a smooth, almost bland, Sullivan than knock-your-socks-off Gaudi or sock-you-in-the-eye Gehry that I usually expect from a DIPA. The malt flavor is dominant and quite tasty like Calatrava, and well-structured like another Chicago favorite, Mies van der Rohe. Excellent, an Eiffel, not transcendent, like a Le Corbusier.
