On tap at GI Clybourn. Poured a bronzed amber with a short layer of off-white head... almost clear. Aroma was quite vibrant, with lots of sharp, sliced, fresh fruit (apples and pears primarily).. as well as caramel... very fresh, soft, and smooth. Flavor was strong, with fresh lighter fruits and Belgian-style yeast.. felt similar to the Belgian reserves.. strong. Carbonation was high.. mouthfeel smooth, with floral and alcohol hits at the edges... alcohol became a bit too sharp as this warmed. Solid overall.

On tap at Wrigleyville: Listed as Triple Play , neat baseball referance! Served in proper glassware. Hazy golden hue with small white head and good lacing. Moderate sweet toasted malt and ripe fruit hop aroma. Hints of cereal, flowers, banana, apple, clove, vanilla. Initial taste was fruity and spicy. Nice hop bite and a very slight alcohol touch cleans the palate. Woody dry and sweet fruit finish. Medium to full-bodied. Lush and soft mouthfeel. Nice tripel, spicy and sweet, yet not sticky or coy. Just enough hop to keep it honest, Enjoyed #401.

UPDATED: JUL 26, 2005 Now brewed with a stronger recipe, this tripel ismore alcoholic, fruitier, and tastier. Hazy gold in color with a short-lived, frizzy white head, it has a warm, cherry & plum aroma. The sweet malt retreats to the background as the fruit and alcohol carry the flavor and the finish, sticky and warm. Not bad.

Sampled on tap at the GI Invasion Event at SmallBar Fullerton (Chicago, IL). Pours a near transparent golden pour, a light haze, decent frothy white head, with good lacing. Aromas are a touch of urine, honey, and crisp bready malts. Faint yeast, honey, and sweet malts, faint yeasty spice. Initial is medium bodied, honey malts, apple, bread dough, and slight yeasty spice. Some vanilla, honeycomb, and bread dough, some apple, pear, faint citrus. Finish is fairly clean, a little sweet and a little hot. Not bad, but not complex. A little overwhelming.

draft. pours clear golden white head, aroma has corn sugar, honey and spice. flavors has honey spicy, candy sugar, and odd dirty and moldy finish.

UPDATED: OCT 3, 2007 Pours a not very cloudy deep golden orange. As it settles bits of carbonation make their way to the top. Beer clears up. Not very strong aroma of lemon banana. Has some more sweet citrus tones. Begins quite sweet, like an orange creamsicle, though not that creamy. Has a touch of banana, and maybe some light clove. Very little hops, with a sweet light caramel, orange malt backbone that is decently medium bodied, but just has no real complexity for this style. No yeasty flavor. More alcohol would benefit this beer. Still an easy good drink.

Hazy golden orange with white lacing. good aroma of banana, yeast, spice (pepper, clove). Sticky, chewy, sweet with a bit of alcohol and lots of banana. Northing frothing, though it has that type of carbonation (does that make sense?), helping the body along nicely. Sort of basic, but good. (on tap at Clybourn location)

Goose tripel. on tap at goose takeover, smallbar fullerton.. Slightly clear golden brown with a thin soapy white
head... Honey sweet tripel like qualities and grainy background...
Flavors are sweet and linger through on towards the finish. Body is
simple and typical for the style.

UPDATED: JUN 3, 2005 Resampled at Clyborn location: Interesting for a triple. Very fruity nose with an almost total lack of banana/clove flavors--must have fermented at lower temps. There’s also an unfornute cabbage/sulfer thing going on but you really have to look for it so it’s a minor concern. Full bodied with mild carbonation. I think this would do better a bit drier or even with a little more carbonation to cut the sweetness. As it is, a solid tripel.
Original Rating: Poured in a nice tulip glass at the brew pub in Wrigelyville. Clear golden color with absolutely no head. Banana and even more so cloves in the aroma. Full, round mouthfeel. Spicey with heavy notes of clove. Not the most complex tripel but well balanced and delicious.

GTM ’06. Off white head, creamy, cask-like head. Hazy orange. Beautiful. Tastes like a cask. Subtle flavors. Very nice beer.
