Boutip (1769), Gatineau, Quebec, Canada May 15, 2008 Bottle: Poured a deep clear brown color ale with a huge foamy head with a light brown head with good retention and some lacing. Aroma of sweet malt with some dry fruits notes. Taste is also dominated by some sweet malt with noticeable trace of candi sugar and some dry fruits notes such as figs and plums. Body is slightly thin for the style with great carbonation and some light alcoholic phenols. Not the best Christmas Belgian style ale I have tasted but pretty good nonetheless.

Firm toasted malts harbor sweetened dried fruit in a balanced setting where sustained hop bitterness installs its leafiness for the long run.
Further Personal Perceptions:
-Sturdy foam covers the apparently clear(?!) orange-tinged blood red.
-The nose is tamer and more linear than the flavor profile, which appears more expressive, but also more complex.
-The comfortable effervescence and levelled dextrins provide a well-sculpted mouthfeel.
-This is not nearly as spicy as most Belgian Kerstbiers.
-A discreet alcohol presence lets all other flavors shine.
-Some minerals seem to accompany the toastiness and light roastiness, especially in the nose.
-The sweet fruitiness is redolent of licorice, but not overly so.

Arôme: Odeur de céréales grillées et d’épices. Apparence: La couleur est brune bourgogne avec une faible densité de bulle. Présence d’un moyen col beige crémeux et d’une large dentelle sur le verre. Saveur: Goût de caramel fruitée et de céréales avec une pointe d’épices. Palette: Le corps est moyen avec une texture légèrement crémeuse. Moyenne effervescence en bouche.
