Bottle gift from SJ. Belgian strong day. Nice notes of dark fruit, raisin, bread, caramel and hop. Nice sweet and bitter finish. One of the best strongs I ever had.

2012 bottle poured into a trappist glass. Pours a murky amber to brown with a velvety head of beige foam. Sheets of lacing down the side of the glass. Aroma has notes of hot yeast, prunes, figs, sugary sweet. Some spice notes. The taste has a lot of sugary sweetness throughout. An alcohol heat comes through pretty strongly and especially in the finish. Thick mouthfeel and a subtle carbonation.

Cuvée 2009 75cl bue en 2013 après donc 4 ans de cave. Sublime tout simplement. Proche de la perfection. La meilleure bière que j'aie eu à goûter dans ce style.

Pours with a big head; brown in colour with a hint of red. Dark fruity sweet taste with a bit of alcohol burn compared to other Belgium beers.

Impulse buy from numerous displays at a Wegmans. 2013 corked bomber into Trappist glass, deep dirty dark brown color with light tan head. Aroma of sweet malt, dark dried fruits (raisins, plums, dates), brown sugar, toffee and a slight red wine note. Taste is huge malt sweetness (caramel, brown sugar, molasses); introducing notes of fruit (berries, pear, apples), light chocolate and slight vanilla/woody notes. Heavy body, low carbonation, soft, creamy with sweet toasty finish. Very complex sweet Belgian strong, hugely enjoyed.

2011. couleur ambre très foncé, nez sur le moka, le chocolat noir, avec quelques fruits (prunes cuites, cerises noires). Bouche puissante mais l’alcool est bien intégré, caramel torréfié, réglisse, un tout petit peu de sucre, café, fruits cuits. Longue finale. Bière censée bien vieillir : vérification dans 10ans.

Dark hazy brown. Aroma of raisin and brown sugar. Taste is sweet and malty. Dark fruit and candy stand out.

Aroma is a little lacking but the taste is incredible. Feels good on the palate and looks good. Overall an excellent beer.

Poured on draft at The Trappist into a Gouden Carolus tulip.
A: Dark, malty notes of brown sugar and caramel with some plum, dark cherry and cola notes.
A: Pours an opaque, deep mahogany with bronze highlights and a finger-width creamy khaki colored head; decent retention, nice walls of lacing. I cannot fathom a better looking beer.
T: Big, bold taste with spicy yeast up front, followed by fruitiness and sweet malt giving way to a slight crisp bitter taste at the finish, along with more malt. I’m a little surprised at the sweetness of this beer.
P: Medium to full bodied with moderate to high amounts of carbonation. Very creamy.
O: This is one of the more sugary Belgians on the market, but that is part of its appeal. If you’ve previously enjoyed Chimay Blue or Rochefort 6, I would highly recommend trying this beer. My favorite of the Carolus’ offerings.

2012 Vintage, cellared for one year. Bottle from LCBO. Smells of brown sugar, booze, dates. Dark rich brown reminiscent of cola, thin head which is reabsorbed quickly. Tastes startlingly sweet right from the outset. A very rich full flavour of fruits, raisins, almost a red wine-like intensity. Creamy mouth-feel reflective of the lower carbonation. One of those beers that would step in nicely as a wine.
