3.5 AROMA 6/10 APPEARANCE 4/5 TASTE 7/10 PALATE 4/5 OVERALL 14/20
UPDATED: MAR 17, 2007 RE-RATE. Bottle. Pours rich crimson brown with nice, clinging lace. Aroma is banana that is quickly offset by sweet berry, concealed in part by sour malt. Flavor is a rush of banana followed by a sweet malt that slowly fades along the back of the tongue. Spicy wood and hints of alcohol are detectable as well. Full mouthfeel. Much better than the last bottle I had.

3.8 AROMA 6/10 APPEARANCE 5/5 TASTE 7/10 PALATE 4/5 OVERALL 16/20
UPDATED: DEC 5, 2009 750 & 330 ml bottle compared. Mahogany body with big beige head. Complex aroma, candysugar, malt, fruit and alcohol. Flavor is complex and sweet. Candysugar, malt, alcohol (less than expected) yeast, spices, dry fruit and some caramel. Nice and interesting, but the sweetness may be to overpowered after a few glasses. The difference between small and big bottle is minor, one extra year storage make more to this brew (smoother).

4.2 AROMA 8/10 APPEARANCE 4/5 TASTE 8/10 PALATE 4/5 OVERALL 18/20
Dark amber brown color with a dark tan, rapidly diminishing head that leaves some sticky foamy lacing on the glass. There’s some magical quality to the aroma that all Gouden Carolus beers seem to share... a mouth-watering, brown-sugary, spicy, malty sweetness. The flavors of the Noel are similar to those of the Classic and the Grand Cru, but also present a heavy spiciness (cinnamon, clove, nutmeg), dried fruits (dates, plums, raisins, cherries), dark brown sugar, caramel, and a certain woody smokiness. This beer is very complex and interesting. The finish is somewhat astringent, and leaves behind an amazing tobacco-like, woody, smoky aftertaste. Great stuff.

4 AROMA 8/10 APPEARANCE 4/5 TASTE 8/10 PALATE 4/5 OVERALL 16/20
Cellar temperature corked 750ml bottle: Pours a cloudy brown amber color with mega floaties and a small light tan frothy head that leaves quite a bit of lacing as it dissipates. At first, the alcohol in the aroma was dominant. Thereafter: Excellent blend of rich malts, grassy hops, cinnamon, brown sugar, cherries, plums and orange peel. Heavy body and very smooth with ample carbonation. Ending is pleasant and subtle. Give me more! : )

4.3 AROMA 9/10 APPEARANCE 4/5 TASTE 8/10 PALATE 5/5 OVERALL 17/20
Bottle: Pours a dark brownish orange with a thin tan head, aroma is of rumcake, brown sugar, lemon, cherries, plums and other dark fruits, medium bodied, smooth texture, mellow carbonation, starts and ends lightly sweet with a long aftertaste. Very nicely done. This bottle is between four and five years old and aged nicely.

4.2 AROMA 8/10 APPEARANCE 3/5 TASTE 9/10 PALATE 4/5 OVERALL 18/20
C&C 750. No date on the bottle, but I believe this is the current vintage. Murky dark amber with an orange tint. Dense beige head. Very complex nose - sweet, spicy fruit, estery, dates and caramel. Spicy fig and date flavors, very deep malt flavors, dark brown sugar, light anise. Heady stuff - very good!

3.9 AROMA 7/10 APPEARANCE 5/5 TASTE 8/10 PALATE 3/5 OVERALL 16/20
0.75 l bottle. Reddish brown color with thick tan head. Sweet, tart, fruity, caramelly and spicy aroma with notes of licorice, anis, cinnamon and artificial candy store aroma. Sweet, tart and warming flavor with raisins and caramel. Too sweet.
