Silphium (2028), Lansing, Michigan, USA Jul 2, 2006 On tap at GRBC. Orange-brown body, medium off-white head, decent carbonation. Sour, funky aroma with fruit and unfermented sugars as well as a touch of oak. Tart bite followed by sweet fruitiness, plenty of sugar, but infused with the brie cheese notes created by the wild yeast strain. My suggestion would be to lose the extra sugars added to entice the crowd that fears sour beer. Still, it’s nice that a local brewer is producing something out of the ordinary. badnewsbeers (982), Grand Rapids, Michigan, USA May 30, 2006 pretty much the same exact thing as their Peach Lambic...more apricot than peach however.....dissapointing that this is somewhat flat, and gives rise to a syrupy palate....a 3.3 is probably generous, but this has potential if it was done right
