COMMERCIAL DESCRIPTION
This thick, rich ale was brewed with plenty of caramel and roasted malts, and subtly spiced with American Chinook and Willamette hops. It boasts flavors of chocolate and coffee, along with raisins and dried fruit soaked in sherry. We’ve accentuated the natural smokiness of the brew by adding a small amount of beechwood-smoked malt and aging the brew in an oak whiskey barrel, which also adds notes of oak and vanilla.

UPDATED: MAR 31, 2013 On tap at JL Beers in Fargo. Pours black with cocoa head. Very nice. Aromas were of anise and coffee. Flavours were strong black coffee mostly. Some sweetness. I liked it. Re-rate: aromas of lactose and sour cherries. Flavours of smoke, anise, and toasted malts. Some coffee and cream notes. Very nice.

Aromas of chalky coffee beans, cocoa and oak. Solid black with no foam whatsoever. Smooth flavors of cocoa, oak, coffee, dates and some bourbon. Very smokey on the palate with a alcohol sting on the finish. Overall, this is a very well rounded stout with crisp flavors and strong alcohol. I’d give this an A rating.

12 oz. bottle, bottled on 10/23/2012 A - Pours dark, opaque black with a 1 finger dark brown head that dissipates quickly. S - Nice roasted coffee and sweet milk chocolate aroma. T - Starts roasty, moves on to sweet chocolate, and finishes with a big dry roasty bitter coffee taste. After a couple of sips I noticed a little bit of an alcohol burn in the back of my throat that stuck around for a while. M - Full bodied, thick and creamy mouthfeel. Finishes dry. Overall, I would consider this an average Imperial Stout. It’s good, but I’ve had a few other Imperial Stouts that I consider to be much better. It would interesting to see how much better this beer is with a year of age on it to mellow out the alcohol.

From bottle. Pours rich black with a tan head. Aroma pure roasted malt, chocolate and slight spicey coffee and alcohol. Taste follows with rich coffe and creamy chocolate that finishes with a warm alcohol palette.

November 13, 2012 on tap from iTap. Black pour with limited head. Chocolate, caramel, alcohol and vanilla in the aroma and taste. Medium body with some carbonation and a rough finish.

Bottle on Amtrak Train 27 - The Empire Builder ( from Binny’s South Loop) - 05/11/12. Pitch black, big coffee head which soon thins to a pond and edgeing. Nose comprises roast malt, milk chocolate and a touch of soap. Tastes of roast malts, chocolate, liqourice, molasses, dash of coffee and mineral tones. Full bodied with soft carbonation and a roasted finish. Drinkable but a bit of a let down if truth be told.

A vigorous pour into my Bruery tulip produces an almost three-finger thick, richly brown colored head. The beer is richly black and passes no color when held up directly to the light. The aroma seems to still have a spicy, fruity hop character to it, and there are layers of tobacco, musty leather, and the more you dig into it layers of concentrated fig, prune, molasses, spicy cinnamon, rich, smooth roasted malt character, concentrated roasted sweet malt.

Lightly sweet with ample balancing roast character, the beer finishes with a dry, roasted, leathery, slightly chalky, bitterly roasted, slightly chalky, perhaps a touch of burnt tartness, and a firm hop bitterness that is lighter than it could be. There is a spicy, slightly herbal hop character to the finish. Perhaps a touch of oxidation accentuates some tobacco notes here, as well as a burnt molasses note. The beer has viscous, rich feel to it, without being cloying; it is on the rich side for an 8% abv beer, but it is perfect for what this beer is trying to be.

There seems to be a touch funkiness here, it provides a mustiness here as well as a touch of mushroom character and perhaps a touch of phenolics. Mostly though this beer is a nice balance of roasted malt, residual hop spiciness, light oxidation, and rich malt character. In the end this is quite an enjoyable beer, I like how complex this beer actually is, my guess is that the age has made this a better beer, it has certainly been sitting in the back of my fridge for long enough.
