Grand Teton Brewing Company has been brewing bold, flavorful beers and serving them from large, beautiful bottles as part of its Cellar Reserve Series since March 2004.

We’ve always intended these beers to be wonderful fresh but also to be “cellarable”--to improve with months or even years of proper storage. Over the years we’ve been happiest cellaring our strong malty beers. That’s made selecting styles for our summer Cellar Reserve releases a challenge, since the best beers for cellaring are not always the best beers to enjoy on a hot summer’s day.

In Berliner Weisse we think we’ve found the perfect style for our summer Cellar Reserve. This north German wheat beer is traditionally brewed and released very fresh. It has a light body from the wheat and refreshingly tart acidity that make it a perfect summer thirst-quencher. Its lemony tartness is provided by a secondary fermentation with lactobacillus, the same microorganism that’s responsible for yogurt’s tang. That tartness increases and improves with age, so the people of Berlin are known to buy extra bottles to bury in their gardens for two years or more.

As usual with our Cellar Reserves, we’ve taken a traditional style and added our own twist. In this case we’ve tripled the strength over the traditional beer, which should only increase its aging potential. For the primary fermentation we used a traditional Bavarian hefeweizen yeast that produces soft notes of banana and clove. We followed that with lactobacillus and six months in conditioning to create a complex fruity acidity that compliments the soft sweet malt tones and a unique ale that is both fulfilling and refreshing.

[ Courtesy of jackl ]. Unclear medium yellow colour with a large, frothy, good lacing, mostly lasting, white head. Aroma is light to moderate malty, pale malt, moderate hoppy, grass, citrus, moderate yeasty, tart citrus, funky, lactic notes. Flavour is moderate sweet and light acidic - sour milk with a long duration, tart citrus, citrus peel, hoppy, yeasty, citrus. IMO. quit fresh. Body is medium, texture is oily, carbonation is soft. Wow, terrific ideat o bring a berliner weisse to a festival on a hot summer day. Draft at the 18th Mountain Brewers fest. Cloudy yellow color, thick white head, solid lacing. Aroma of seawater and lemon. Taste is light lemon, salt, white bread. Really nice. Closer to a gose than a berliner.

UPDATED: DEC 2, 2012 Bottle ahared at Craft, thanks to Jack. Pours lightly hazy gold with a small, creamy white foam head. Nose holds some doughy malts, light lemon. Medium sweet flavor with tons of doughy malts, hints of lemony citrus, bread. Medium bodied with fine to average carbonation. Sweet, doughy malt finish, very light lemon tang. Does not have the tartness I would expect from a Berliner weisse. Tasty beer, though.

Bottle, from Bottlecraft Little Italy, split on the hotel patio SD on the evening of 13/11/14. Lightly hazed golden with a decent off white swirl and edgeing. Nose is lemon rind, bitter citrics, straw, tarte peach, light woody tunes. Taste comprises yeast esters, straw, hint of vanilla, bitter lemon. Medium body, fine carbonation, semi drying close with a tarte citric wash. Ok ’Linner erring towards basic.

¨Bottle @ fonefan berliner weisse, cream ale multistate tasting. Nice head with good duration. Color is hazy golden. Aroma and taste are brett, citrus, fruits, wheat malt and hops. Light acidity and mild. Hides alcohol quite well.

A very hazy golden orange color with a white head. Smells surprisingly sweet for a berliner. A bit of fruit, some lactic tartness, and some sort of hefeweizen like notes of clove and banana. Flavor is quite fruity with lemon, banana, and peaches. It’s also sweet, maybe a bit of honey to it. The tartness is there, but not as prominent as usual in a berlinerweiss. Sort of heavy on the palate, too.
