COMMERCIAL DESCRIPTION
English: Viola Sofia is an Imperial Stout brewed for our friend Manuele to celebrate the birth of his baby girl, who the beer was named after.
The beer spent 3 months in Jack Daniels barrels on top of cocoa nibs.
Evolving from travel and friendship, Grassroots creates artisan ales inspired by experience and imagination.
Ingredienser: Vand, bygmalt, humle, sukker, gær.

One of the best stout I’ve ever drunk , with a love of cocoa, coffee and caramel, and an intense black-brown colors. Not to be missed.

Bottle at home with friends, courtesy of Scott. Huge thanks for this one man!!! Pour is dark brown with a small tan head and decent lacing. Big rich chocolate, caramel, brown sugar, light mint, bread, and toffee in the aroma. Taste is dark chocolate, roasted caramel, coffee, dark fruits, green peppers, soy, brown sugar, and vanilla with a rich malty finish. Thick mouthfeel with soft carbonation. Really cool tick.

Pour out of 12 oz bottle, dark black pour with tan head, aroma brought notes of dark sugar, hints of oak, vanilla, touch of grain, dark chocolate, roast, touch of grain. Taste is a mix of dark chocolate, roast, hints of grain, bread, hints of coffee, hints of grain, slight yeast, finishing bitter, dry. Nice.

33cl Bottle at home, thanks to Plovmand. Cheers buddy! Black colour, thin creamy beige head. Aroma of wood, hard roast, roasted black liquorice, some chocolate sweetness, alcohol, ash. Flavour is ashy, hard roasted malts, liquorice, hint of chocolate, harsh bitter roasted malt finish. Medium-bodied. Not much subtlety or JD barrel to be noticed IMO.

12 oz. bottle, sent from Glouglouburp (thanks Dany), pours black with a medium-large tan / light brown head. Nose is very roasted -- nearly burnt -- with notes, of charred roasted malt, a little licorice, and loads of wood. Flavour brings out smoky whiskey notes above anything, with lots of wood, a little licorice, maybe a touch of the cocoa nibs, and some deeply roasted / burnt malt. Very smoky and unusually complex for a Jack Daniels barrel aged beer. The beer finishes on notes of smoke, whiskey and licorice. Very dry mouthfeel, with a smoky profile dominating. Very solid impie stout.

In short: A harsh, roasty, chocolaty and oaky big impy stout. Decent big beer.
How: Bottle 330ml, purchased not long ago but already near expiration date.
The look: Black body topped by a medium tan head with medium retention and leaving lots of lacings on the glass.
In long: Nose is moderate bourbon, a slice of chocolate cake, a piece of date square. Taste has grainy blackened earthy malts with an overall peaty character, medium whisky presence, a lot of mouth-drying oak, cocoa, plenty of roast, roasted almonds, mild alcohol presence but overall well hidden. Relatively low sweetness sensation. Overall a bit harsh, but no more so than most 11% BA Impy Stouts. Big body with a generous carbonation that helps drinkability. The roasted stuff, the peat and the oak made for a beer that had a somewhat ‘Terroir’ character. A good beer but lost in the sea of big BA impy stouts. In a few years from now there will be a show on History Channel showing people drinking Imperial Stouts that were not aged in bourbon barrels.

Bottle in NH - big thanks to Adam. Pours oily, black-brown with a creamy beige head. Ashy roast in the nose, some burnt wood. Medium sweet flavor, quite vinous, with lots of dry burnt wood and bittersweet cocoa. Full bodied with fine carbonation. Moderately dry to finish with charred wood, burnt grass and further bittersweet baking cocoa character. Nice, rich. Pretty bitter with all the charred malts and what have you. Good.

Received as a "gift" enjoyed in a Hill Farmstead glass...best by January 2013

A - Pours an oily black with a 2 finger coffee coloured head that fades to a thin line pretty fast.

S - Nose is heavy on cocoa and wine tannins with molasses and cane syrup

T - Sweet with the standard boozy, bourbon notes. Very little vanilla, tons of smoke and char almost ashy charcoal taste that is a certain downer. Finish is dry and bittersweet. I get some pecan or walnut as well and some sweet finish.

M - Very oily and slick, heavy body almost no carbonation

O - This is a nice stout, certainly some complexity but the ashiness really takes points away from the overall experience.

Bouteille de 355 ml. Arômes assez complexes de chocolat, de malt torréfié, de chêne et de whisky. Robe noire, effervescence plutôt active pour le style et abondante mousse moka. En bouche, le chocolat est très présent et, combiné à la présence du Jack Daniels, donne une impression de petits chocolats fourrés à l’alcool. Moyennement sucrée et bien maltée, elle demeure plutôt facile à boire pour le style. Finale chocolatée et légèrement alcoolisée. Une belle Imperial Stout pour les amateurs de chocolat.

Bottle. Pours pitch black with good lacing and lasting tan head. Aroma is cocoa, soy,bourbon, heavy roasted malts, molases, ash, vanilla.Taste is moderate+ sweet and moderate bitter.Body is medium, texture is oily, carbonation is average. Finishes astringent ashy and alcoholic. Body could have been even more full.
